Welcome to Menu Plan Monday!
Hi friends! I’m happy to see you back here this week. I’m pretty excited because I finally found a Paleo pizza crust that actually tasted good to me. And the best part was it wasn’t complicated to throw together. I will definitely be making it again. I have tried so many different recipes over the past 4 years, it’s such a relief to find a good one 🙂 You can find the recipe link listed below under Friday. Yum!
But guess what? That wasn’t’ my only recipe highlight this week. Another favorite dish that I have had such trouble duplicating in Paleo form is Apple Crisp. I’ve had such a craving for it since it started snowing here already. On Saturday I tried yet another recipe and yay it was delicious! Most Paleo Apple Crisp recipes include nuts which is just wrong as far as I’m concerned. It ruins it for me. This recipe for Easy Skillet Apple Crisp does call for them too but I just left them out and added more shredded coconut. Hit the spot! And look I remembered to take a picture of this one.
So I tell you all this to let you know you should never give up if you try recipes you don’t like. It’s not you, it’s the recipe, ha! Keep looking for one you love!

Monday: Glazed Sheet Pan Chicken with Squash & Apples
Tuesday: Quick & Easy Taco Salad with Delicious Blender Salsa
Wednesday: Easy 20-Minute Mustard Pork Chops served with broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Grain Free Pizza Crust
Saturday: Rotisserie Chicken served with Paleo Cauliflower Fried Rice
Sunday: YOYO (you’re on your own!)
