Welcome to Menu Plan Monday!
Hi friends! How are you today? Did you have a good weekend? Did the time change kick anyone else’s butt? Oh my goodness I was so tired yesterday. I even took a two hour nap after church and I was still tired. It didn’t help though that I stayed up too late on Saturday night. I hosted a 40th birthday party for one of my best friends and it was so much fun. Always great to have laughs with girlfriends. Two of the girls at the party made the cake and it was so fun. All the toppers represent a different favorite thing of the birthday girl. She loved it!
We have above zero temperatures here all week (about 6 degrees C or 42 degrees F) which is pretty incredible. I’m not naive enough to think that it’s not going to snow again but for now we’ll enjoy the sun and warmer temps. Yay!
Here’s what we’ll be eating this week.
My Weekly Menu Plan:
Monday: Honey Mustard Chicken Thighs served with broccoli
Tuesday: Dairy-free Spaghetti Squash Chicken Alfredo
Wednesday: Sheet Pan Pesto Pork Tenderloin, Potatoes and Asparagus
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Lemon & Herb Salmon Burgers
Saturday: Paleo Italian Sausage & Potato Soup
Sunday: YOYO (you’re on your own!)

Leftover buffet? We don’t have leftovers on regular week meals. Husband will only eat limited types of leftovers, so unless it is a holiday and I made a turkey or ham for just the two of us, there are no leftovers. Each meal is planned to be two servings with nothing leftover.
