Hi friends! I sat down last night to type up this menu plan and my computer decided to upgrade for TWO hours. Seriously it had all week to update itself and it decides to do it while I have things to do. Sheesh! Luckily I had made some salsa earlier in the day that was able to console me with its deliciousness while I waited. My beautiful Mexican girlfriend taught me how to make a simple blender salsa recipe last month and I’m seriously addicted to it. I could just eat it by the spoonful, it’s that good. It’s nice and spicy with two jalapenos, seeds and all. Yum! 🙂
I hope you are all enjoying summer with your families and getting some nice weather to play in. Summer is a great time to keep menu planning simple. It doesn’t have to be complicated at all so don’t stress about it. With my youngest away with his grandparents for July we are eating dinner later and later and it’s been kind of nice to be so relaxed about it.
Here’s what we’ll be eating this week although it’s really just a rough guideline especially in summer 🙂
My Weekly Menu Plan:
Monday: Rosemary Garlic Chicken Wings served with Healthy Green Smoothies
Wednesday: Paleo Strawberry Mango Salad with Chicken
Thursday: Leftover buffet
Saturday: Tomato Mushroom Spaghetti Squash
Sunday: YOYO (you’re on your own!)
