Menu Plan Monday ~ April 10/17 Weekly Dinner Inspiration

Menu Plan Monday - weekly dinner inspiration for the week of April 10/17 at I'm an Organizing Junkie blog

Hi friends! In case you didn’t see it last week, I’ve got a little menu plan gift for you to help make your menu planning just a wee bit easier. Print out this handy weekly menu planner using the instructions HERE and then just fill it in with some easy and simple recipes and you are well on your way to an organized, less stressful and chaotic week. I do hope you like it. I designed it so you can fold the page in half and cut it down the middle to have a separate grocery list to bring to the grocery store if you’d like. Or just fold it in half and bring the whole thing with you, whatever works for you to get it done πŸ™‚

This past weekend my daughter turned TWENTY years old. Unfortunately we couldn’t be with her on her birthday (she’s away at University) so my family decided to celebrate with cheesecake on her behalf. We sent her a video of the special birthday plate we always use with us singing happy birthday to her in the background. πŸ™‚ Birthdays are a big deal to me so it’s tough not get to celebrate and love on her in person.

Here’s what we’ll be eating this week with an Easter celebration at the end of it and then spring break happens for us after that. Yay!

My Weekly Menu Plan:

Monday: Sheet Pan Steak and Veggies

Tuesday: My family would eat this every day if I let them: Slow-Cooker Ribs served with baby potatoes and tossed salad

Wednesday: Zucchini Beef Skillet Recipe served over rice for the rest of my family

Thursday: Leftover buffet

Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Paleo Coconut Shrimp

Saturday: Slow Cooker Meatballs over spaghetti squash

Sunday: Easter Dinner: Roasted Chicken over Hearty Vegetables and for dessert I’ll be making Paleo Strawberry Rhubarb Crisp

Have a wonderful week everyone!!

I’m bookmarking the Paleo strawberry rhubarb…that looks amazing! A great add to an Easter meal.

Maybe you’ve already answered this somewhere, but do you find it difficult to cook separate food for yourself? I don’t have any dietary restrictions, but sometimes I’d rather avoid the homemade fast food my kids love.
