My Everyday Healthy Green Smoothie Recipe
Recipe Highlight:
One of my favorite recipes from last week were the Paleo Taco Stuffed Zucchini Boats. They were really good and I was surprised because I’m not a huge fan of plain zucchini. But with the insides scooped out and stuffed with the taco meat, these boats were delicious. Sorry for the not so great phone picture, I was in a hurry to eat 🙂
I’ve had a not so nice three day headache so I’m going to keep this short and get right to what’s on our menu for this week.
My Weekly Menu Plan:
Monday: Chicken Caesar Salad Wraps and for me Dijon Maple Glazed Salmon
Tuesday: Creamy Garlic Spaghetti Squash Casserole
Wednesday: Pineapple Bacon Burgers served with green smoothies
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Grain-Free Flatbread
Saturday: Slow Cooker Buffalo Chicken Sweet Potatoes
Sunday: YOYO (you’re on your own!)

Zucchini boats are on our menu this week too! Did you pre boil them or just fill and bake? Did they have a little bite left to them? I don’t like soggy veggies LOL

Hi Kim, no I didn’t pre-boil, just scooped out the inside seed part, filled and baked. They did have a bite to them and weren’t soggy at all. I don’t like soggy veggies either which is usually why I’m not a fan of Zucchini done in a skillet.
