One of the biggest mistakes that people make when menu planning is selecting recipes that require more work than they have the time to prepare. My goal is always to get in and out of the kitchen fast. Some weeks I’m more excited about the recipes I’ve chosen than others. But this week I’m feeling pretty good about my picks 🙂
My Weekly Menu Plan:
Monday: Open-Faced Avocado BLT Sandwich (no bread for me)
Tuesday: Chicken Pot Pie Soup
Wednesday: Slow Cooker Ham served with rice and broccoli
Thursday: Leftover buffet
Friday: Pizza Party Friday Night! with this Quick & Easy 5 Minute Homemade Pizza Dough and for me Apple Tuna Bites
Saturday: Enchilada Stuffed Sweet Potatoes
Sunday: YOYO (you’re on your own!)

I actually made the enchilada sweet potatoes tonight, and they were simple & delicious. I added some beans to make the meat go further, & served it with corn & roast carrots. Really tasty, thanks for the recipe!
