Hey friends! Here we are back to another Monday, weeks just go too fast don’t they? So hopefully this week goes a little better than last. Stupid three day migraine. But that’s thankfully over and unfortunately so is spring break. Bummer because I’ll miss the kids but good because I can get back to my beloved routines.
Oh and yesterday we had our first hot dog roast over the fire pit. The weather has been beautiful this last week and it’s been so nice to sit outside with the sunshine on my face. I love it! I even got a wee bit of a sunburn (oops) which I actually shared a picture of over on Instagram.
It’s also going to be a weird day for me on Friday as it’s my oldest daughter’s 19th birthday and the first birthday I don’t get to spend with her since she’s away at school right now. It’s going to kill me! I sent her the biggest care package though with a complete party in a box including birthday plates, napkins, tablecloth, birthday banner, balloons, cake mix, icing and sprinkles 🙂
So I hope you take some time today to plan out a few meals for this week. If you are new to menu planning just take it slow and maybe start by just planning two or three meals at first. Keep it simple and wake up each morning knowing you don’t have to stress about what you’re going to make for dinner that day.
My Weekly Menu Plan:
Tuesday: Roasted Citrus and Herb Chicken served with rice and broccoli
Wednesday: Slow Cooker Butternut Squash Soup
Thursday: Leftover buffet
Saturday: Paleo Skillet Beef Fajitas
Sunday: YOYO (you’re on your own!)
