Hi everyone! Hubby and I had a great anniversary away without kids. We spend the night in the city and enjoyed shopping, dinner, and a movie out. We saw Eddie the Eagle and I really liked it. So nice to get away even if only for a night, yay! 🙂
Recipe Highlight:
Last week my favorite recipe was the Slow Cooker Spaghetti Squash and Meatballs recipe. Oh my was it ever good and so EASY to throw together. I loved that you just had to cut the spaghetti squash in half and put it in along with your frozen meatballs and jarred sauce. I will definitely be making this recipe again! Yummy!!
Easy Freezer Meals:
Does the beginning of the week stress you out knowing you’ll have to come up with dinner ideas all over again? I’ve gotten so much feedback that many of you are so busy and need a way to get dinner on the table fast each night. That’s why I think this plan for spending less than an hour on the weekend to prepare 10 meals that go into the freezer until you need them is simply brilliant. All of the recipes in the FreezEasy Meal Plans require very minimal prep. Just load up all the bags with the ingredients and freeze them. Then you can take the meal you want, thaw it partially in the fridge overnight or in a bowl of warm water on the counter for 20 minutes, and drop all the ingredients into the slow cooker, Dutch oven, skillet or baking dish. So easy and I love how organized the plans are with recipes, shopping lists, video assembly instructions, printable freezer labels and more. Wouldn’t that make life so much easier for you? My Weekly Menu Plan:
Monday: Bacon Wrapped Dates with Spinach Salad
Tuesday: Maple Glazed Garlic Chicken (plus making extra for dinner tomorrow) served with broccoli and Paleo Baked Blooming Onions
Wednesday: Chicken and Avocado Caesar Salad
Thursday: Sausages and Dill Hashbrown Potatoes
Friday: Dinner club (rescheduled from last month): Grain-free “Cornbread” and Paleo Lemon Macaroons
Saturday: Pizza Party Saturday Night! and for me Pizza as well (without the cheese of course)
Sunday: YOYO (you’re on your own!)
