Hi everyone! I hope you all had an nice weekend. I’m not sure if today is a holiday in the US but today is Family Day here in Canada so we are enjoying a nice long weekend. My favorite! So I’m keeping things simple here today but first I wanted to tell you that if a chicken recipe ever calls for cinnamon you might want to think twice about it. The recipe I picked last week claimed that the cinnamon was not to be skipped and I really wished I had. Yuck, not my favorite! Just goes to show you how everyone’s taste buds are so different. Did anyone else try it?
Sheet Pan Recipe:
My friend Amy at MomAdvice posted a delicious sounding recipe last week for Sheet Pan Ranch Chops & Veggies that I just had to share with you. It’s a one dish sheet pan recipe which is just awesome for getting dinner on the table easily and quick. Remember picking easy recipes is one of the keys for successful menu planning.
She also has another sheet pan recipe for Sheet Pan Lemon Paprika Chicken & Veggies.

Monday: Homemade Chicken Tenders served with spinach smoothies
Tuesday: Turkey Taco Lettuce Wraps
Wednesday: Slow Cooker Apple Rosemary Pork Roast served with rice and broccoli
Thursday: Leftover buffet
Friday: Catered Sweetheart Supper at church
Saturday: Dinner Club (Southern theme): I’m bringing Grain-free “Cornbread” and Paleo Lemon Bars
Sunday: Church Potluck: I’m bringing Slow Cooker Cheesy Ravioli and Chewy M&M Cookie Bars. Dinner: YOYO (you’re on your own!)

Simple meals are definitely the key! You don’t have to slave away all day to serve a tasty meal. I remember many times adding labor intensive meals to my list and later wishing I hadn’t.

Here in the US, it’s President’s Day – a combination of George Washington and Abraham Lincoln’s birthdays. We don’t really do anything. The bank is closed, but my kids went to school. How do you celebrate Family Day?
We basically just take it easy and rest, a day without chores, whoot!
Enjoying a long weekend here too. Yay! I love easy meals and like the idea of cooking everything on a sheet pan.

I don’t know about the rest of the week since it partly depends on what is on sale veggie and meat wise this week.
Tonight though it’s beef vegetable soup with homemade beef stock. I had some beef bones in the freezer and my brain went ‘aha! Supper!’
Since I have some biscuit’s leftover from yesterday’s breakfast (how did that happen?) I’ll probably turn them into some cheesy garlic bread to go with the soup.
Then, there will be leftovers for tomorrow’s work lunches :D.
I used to dislike soup and now I just love it, yours sounds yummy! Enjoy!
