Hi everyone! I hope you all had a wonderful Christmas with family and friends! I enjoyed my time off so much just relaxing and making memories. My girl leaves today to go back to school, I simply can’t believe how fast a week goes 🙁
Recipe Highlight:
One of my favorite recipes this past week were the delicious Paleo Almond Donuts I made for myself. I had purchased a donut pan awhile ago and was waiting for the perfect recipe to try it out with. What a treat!
Also I had a chance to update the Pepper Swiss Cheese Ball recipe photo. What do you think? My daughter was a very happy girl, it’s her favorite!!
We stay in on New Year’s Eve and just hang out with the kids while we fondue. What do you have planned to bring in the new year?
My Weekly Menu Plan:
Monday: BLT Grilled Cheese Sandwiches and scrambled eggs for me
Tuesday: Dinner out
Wednesday: Paleo Pork Chops with Mushroom Sauce served with spinach salad
Thursday: New Year’s Eve Fondue Party!
Friday: Slow Cooker Beef Stew using leftovers
Saturday: Pizza Party Saturday Night! and for me Paleo Salmon Cakes
Sunday: YOYO (you’re on your own!)
Have a terrific week everyone!!

I love my donut pan! Even though I’ve only used it a handful of times over the 2 years I’ve had it, each time it’s resulted in a delicious treat that feels much healthier than buying donuts somewhere.

My next goal is to try and find a recipe to make some donuts for my dairy, egg and gluten free son!!

I canNOT believe the week is over and she has to go back! Did you get a gazillion hugs to tide you over?
Laura Wittmann says
I hope so, I miss her already!!

Bless your heart…you have to eat scrambled eggs while everyone else eats BLT’s. I’m not sure I could be in the same room while I ate my eggs. 🙂 I guess it’s worth it to be healthy!
Laura Wittmann says
Haha, tell me about it! I can have a little bacon now and then though so I’m not totally deprived 🙂

We are away visiting family this week, so I’m not menu planning. I hope to get back in the swing of things with next week’s plan. I love that you are doing a fondue party for New Year’s Eve! Maybe I can convince our family to do the same … or at least the chocolate fondue part because who doesn’t love chocolate!

It’s a tradition for us, I love that it takes awhile and we always get some great conversation going with the kids!
