How do you like the new banner above that I made? I thought we needed something a little more enticing to get us all fired up about menu planning….haha….let me know if it works for you :)
So Friday nights as you know is usually pizza night at our house. However when it turned out to be only my youngest and I home for dinner, we decided to switch things up (I can’t eat pizza) and do something a little simpler. It was a green smoothies (spinach, frozen mango and banana) and popcorn night while we watched a movie.
This is the first time I’ve eaten popcorn in over 7 months. It’s one of my favorite foods so when I found some non-gmo popcorn kernels the other day I decided to take a chance and see if it caused the pain in my hands to flare up. And it didn’t, whoot!! It was absolutely delicious popped up with some coconut oil. Yum! I won’t have it often but as a treat once a month or so will be nice for sure.

Tuesday: Honey Mustard Chicken Wings served with spinach salad
Wednesday: Dinner out :)
Thursday: Leftover buffet
Sunday: Very Greek Grilled Chicken served with baked potatoes and corn on the cob
