Menu Plan Monday ~ April 7/14

Hi everyone!  Hope you are all doing well.  This week is an exciting one for me as my daughter turns 17!!!  She is such an amazing girl and I want her to have a wonderful day.  I’ll be making her a special dinner that she has been talking about for weeks.  I hope I don’t disappoint!

Recipe Highlights:

This past Saturday we held a baby shower brunch for a sweet friend and her new baby girl.  I made this Gluten Free Blueberry Breakfast Cake and it was just awesome.  I will definitely be making it again.  Not to sweet and the added lemon zest adds such a nice touch.

Gluten Free Blueberry Coffee Cake
Another one of the girls brought these super cute yogurt granola parfaits.  I thought this was a such a fun idea without a lot of work.

Yogurt Parfaits
Finally I wanted to tell you that we really enjoyed the Cranberry Pineapple Pork Chops recipe.  It’s another keeper.

The parfaits are a great idea – it never occurred to me that you could easily do them for a crowd, but it’s brilliant! Thanks as always for hosting 🙂

Happy birthday to your daughter! My daughter doesn’t like cake, so we always have pie. I’ll have to suggest cheesecake to her next year though.

    Have a great week!

Thanks for hosting, Laura! Those pork chops look yummy! I have grilled chops on the menu this week, but I might have to give those a try instead. 🙂

I’m sure that special dinner will be awesome! 😀 Thanks a million for featuring our Crock-Pot Creamy Chicken Corn Chowder – it’s so ridiculously easy and has just been super-popular with our readers – hope your readers will love it every bit as much! Making a family brunch in a few weeks and one of the attendees has celiac, so been thinking what to make. The Blueberry Breakfast Cake looks great! Also love the idea of the parfaits!

How much vanilla did you use in the blueberry cake? The original recipe confused me, and I want to make these this weekend!
