Menu Plan Monday ~ Nov 11/13

Hey gang, I’m feeling under the weather today or to be honest like a truck has run over me and left me to fend for myself.  But I’m pushing through and planning my menu so it will be done and out of the way.  Plus I don’t want to let any of you beautiful people down 🙂

I’m not sure if any of you picked up on this last week, from the looks of my simple menu, but my cooking week was super easy as my hubby was out of town.  No big meals for a whole week…it was wonderful as you know how much I hate cooking.  So it’s back to the kitchen this week but I’m excited to try some of the new recipes I have planned.

Recipe Highlight:

Yesterday for church potluck I made these Chocolate Marshmallow Brownies.  I have no picture of my own to share with you because they went so fast that I didn’t get a chance.  I came home with an empty pan!  They were pretty easy to make too and since I made them gluten free, by subbing in my gluten-free flour blend, I got to eat a few too many myself.  No one even guessed they were gluten-free either.  Oh my they are so good.  The recipe makes a full sheet pan too so it serves a lot.  Perfect for potlucks!

Monday:  Caramel Apple Pork Chops served with potatoes and corn

Tuesday:  Hawaiian BBQ Chicken over Rice

Wednesday:  Taco Casserole

Thursday:  Leftover buffet

Friday:  Dinner club ~ this month’s theme is Middle Eastern.  I’ll be making Feta and Red Pepper Hummus served with Garlic Pita Chips

Saturday:  Slow Cooker Beef Stew (family favorite!)

Sunday:  YOYO (you’re on your own)

  2. I am new to GF (well, 7 months in) but haven’t done any gf baking. Have you discovered any recipes that don’t work with subbing a gf flour blend or do pretty much any of them work the same?
