Hi everyone! Welcome back to another organized week of menu planning. So happy you are all here and are able to answer my ongoing questions about random stuff 🙂 Last week it was about eggs this week it’s about gluten free tortillas. I really don’t miss anything at all being on a gluten free diet EXCEPT maybe wraps. I adore wraps of all kinds, they are delicious and quick and easy to throw together. What I don’t adore is gluten free tortillas, which are typically corn tortillas. They taste like paste to me. So dry and they fall apart so easily. I’ve tried a variety of brands without much luck. My girlfriend made some homemade corn tortillas for me using a tortilla press which were very good but you have to eat them fresh and it’s a lot of work for a “quick” lunch. So I’m hoping someone can recommend a brand for me to try that are hopefully yummy and non-paste like 🙂
Recipe Criteria:
For those that might be new to here and menu planning I wanted to share one of the best ways to make to the menu planning process as painless as possible. It all comes down to knowing what your recipe selection criteria is. You can see my top 10 list of things I take into consideration here. It makes picking my recipes quick and easy….if a recipe doesn’t meet my criteria I don’t waste my time with it. It doesn’t mean I still don’t pick some duds now and again but it has saved me from picking something completely unreasonable for my time and talents (which are very minimal in the kitchen!). It really just helps to write it down and have a list. Have you created yours yet?

Sorry I can’t help on the tortilla issue, since my friend who is g-f eats corn tortillas. The only thought that occurs to me is to ask if you’ve tried white corn tortillas? I think they’re a little milder than the yellow corn, although maybe that’s just in my head, LOL.

I am so with you on the tortillas. I think I miss them more than bread. Corn tortillas and gluten free ones are just not the same. If you find some good ones I would love to hear about them.

Oh I would LOVE to go to Blissdom Canada!!!! I am not sure it is in my blogging budget to go though! I am going to a conference in Philadelphia called Eat, Write, Retreat via a scholarship at the end of May, once I go there I am sure to be hooked! It would be super cool to meet you 🙂

I’m not a fan of corn tortillas either … blech! I’ll be reading to see if you find some though!! My first menu plan last week was kind of a failure … not totally, but when 3 of the people who show up at your dinner table are teenage boys and hubby, and then their schedule changes … well, you end up with left over night much more frequently! Alas, I will try again … at least I didn’t have to cook as much! haha!

I buy white corn tortillas on a regular basis, but you do have to find a good brand. And I think the thinner and fresher the better — made locally if possible. I always check them before buying to see how soft and bendable they are. I find the Mission brand tortillas to be too thick and dry. It’s also important to make sure you heat them on a skillet. I know a lot of people are just so used to eating the flour tortillas right out of the bag, or lightly heated in the microwave, but that doesn’t work so well for corn tortillas. I like to spray them with a little oil and cook them in a skillet over medium-high heat. It will only take a few minutes on each side. If you cook too long they will become stiff enough for tostadas.
You can also buy rice tortillas, but I don’t really enjoy those. They are often stiff and chewy. I sometimes buy rice papers for egg rolls and wraps. You don’t need to cook them, but they do need to be rehydrated with water. They work good, but don’t have the taste and texture of tortillas.
