Menu Plan Monday ~ May 31st

I’m sure today will be a quiet Menu Plan Monday what with many of you enjoying the day off in the US for Memorial Day.  Guess we’ll see who the die hards are though won’t we 🙂

I have a little confession about my menu plan from last week.   Between showings of the house and being invited out to eat I missed making three of the six meals!   Thankfully I had planned a really easy week last week so it didn’t really matter.  I did make my potluck dish though and let me tell you, the Bread Bowl Seafood Dip was a HUGE success and most definitely my new go to appetizer.  It was so easy to make and so very good.  You must try it and let me know what you think of it.

So I’m keeping this short and sweet today and want to wish you all a very wonderful and delicious day.  How are you spending the holiday?

Here’s what’s on our menu this week:

Monday: Salmon Quesadillas

Tuesday: Maple Rosemary Chicken (a family favorite!)

Wednesday: Tortellini Bake

Thursday: Leftover buffet

Friday: Cheesy Ham and Pasta Bake (a family favorite!)

Saturday: Roast Pork Tenderloin Supper

    I guess I’m a die hard! 🙂 We’re spending our Memorial Day painting the house (almost done, woo hoo!) and will grill out later in the afternoon. Hope you have a great holiday with your family.

    3 of the 6? Good thing you can just go with the flow so easily…I’m not good at that.
    We’re off to a parade in a few minutes….then to a lake for a picnic then back home to grill.

    Thanks for hosting another yummy MPM! I have some ham in the freezer that needs to be used, maybe I’ll add the Cheesy Ham & Pasta Bake in, it look delish!

    I missed a few of my meals too. I blame the holiday weekend and Cold Stone Creamery ice cream. Today we are off to the in-laws for BBQ. Can’t wait. Enjoy your day die hards.

    Die hard? Probably not. But I am really trying to keep some sort of plan going. I really need to stay in the habit of doing it, or I’ll end up skipping several weeks at a time.

    I can definitely empathize with the house showings. I HATE those! (Although, obviously, they bring about the desired result of SELLING!)

    I am usually number 300 or so. LOL!! We must have fewer people because of the holiday. I am excited to play this week since my In The Kitchen With Kelli Series is starting! Lots of kitchen tips, giveaways, blah blah blah. LOL!

    I have one post to get scheduled, then I will be visiting the players.

    Laura, I have had plenty of times where life hit and I didn’t follow my menu exactly.

    We were planning on doing some yard work, but the rain is pouring- definitely not the kind you can go out in without creating a muddy mess. On to plan B.

    Someone has a cheesy pasta bake recipe? I need it lol. My kids love cheese. And pasta. HAHA.

    Anyhow I’m going to be making whole wheat spinach, chicken and artichoke pizzas for us and for a friend that’s having a rough time. With mediterranean salad. That’s for tonight. I have to work out the rest of the week some time today.

    We’re just getting a few things done around the house today. It will be nice to spend time around our home. Other than that, we’re just going to relax and maybe go for a nice walk!

    I am starting up a new food-only blog. My other (homeschool blog) is still around though. I too ate too much junk food this past month, so this week is somewhat different…

    We spent all day yesterday cleaning out the garage and I didn’t get a chance to go to the supermarket this weekend, so that is what I will be doing today. Unfortunately my husband has to go into the office for a few hours to do an interview, so our fun might be cut short. I think the kids will spend the day in their pool and we’ll grill tonight.

    I thought that Bread Bowl Seafood Dip thing looked delicious when you posted it last week. I’m definitely trying that next time I have a pot luck to go to.
    I’m keeping track again of how much we spend on our Real Food budget. We started eating this way around a year ago and I haven’t noticed a big jump in how much we spend (except when my 22 year old son-in-law was living with us, he eats more than I ever thought possible). It encourages me to know we can eat such good food for such a reasonable amount of money! I know that menu planning is one BIG reason we are able to stay on track. No running to store (15 miles away) for last minute items and dining out is less since it is easier just to make what I have planned. Thanks Laura for doing MPM.

    Another die hard b/c I have my menu planned for the week!
    Today is burgers and homemade potato salad (fitting for Memorial Day)
    Tuesday-pizza night
    Wed-fish and corn on the cob
    Thurs-leftovers (Thursday is usually designated our leftovers day)
    Fri-pasta w/homemade meat sauce

    We usually go out on Friday nights but since we went out this past Friday and Saturday nights, I am sick of eating out. Homemade food is so much better!

    Wow, 3 out of 6 is a pretty average track record for me! Things always turn out differently than I think they will throughout the week…

    I’m working today so I totally forgot it was a holiday! Whether or not we’re relaxing today, the show must go on and meals must be made – I shall expect to see full participation, now, menu planners!

    It’s definitely barbecue season here in Montreal.

    3/6 is a pretty good track record — it’s partially why I typically don’t plan Friday or Saturday meals. Either I’m eating something scheduled for a previous day, or I’ve found a better offer. 🙂

    I just bought a 3 pack of tortellini that was on sale last week, so I might have to try that tortellini bake recipe sometime! I’ve decided to challenge myself to significantly cut down our grocery bill without sacrificing taste or nutrition, so that’s the basis for my menu plan this week.

    The seafood dip was so eye-catching last week that I had to add it to my menu this week. I have it listed as an “extra” as I’m not sure what I want to do with it. I may make it when I have my cousin and her friends over to help plan her wedding!!

      Usually we have some of those leftover as well. If not then it’s usually just cut up raw veggies for everyone or a simple spinach salad 🙂

    I’m a die hard too! This week is extra busy for us with it being the last week of school and swim team practice is going strong!

    Looking forward to trying the dip you made–I’m always up for a great dip and everyone always expects me to bring a dip of some kind to any function!

    This is my 1st Menu Plan Monday & I want to thank you for providing a great idea & resource for accountability. My hubby finished planting our garden today while Grandma & I worked w/the girls to finish their 4-H projects. I suddenly realized I hadn’t posted my 1st ever Menu Plan Monday & it was already 8pm. So I quickly pulled out my favorite cookbook & made a menu. Whew! I am glad that is done for the week!

    Laura, we had the BBQ Chicken and Cheddar Sandwiches this week and they were delicious! We’ll be having those again. I used homemade cheddar and herb hamburger buns that were perfect with them. Thanks for the link last week! ~~Rhonda 🙂

    Wow! I love your website and have been following Menu Plan Monday for a long time. MPM is what prompted me to finally set up my (very humble) blog to keep a record of my own menu planning. Thanks for inspiring me to be a better mother and wife!

    We also tried the BBQ Chicken and Cheddar Sandwiches last week and I agree that they were delicious!
