As you can see, with my change of season, it’s getting harder and harder for me to get Menu Plan Monday up by 8:00 pm and it’s stressing me out a little bit. So I’m not sure how I’m going to change it up to make it work for us but will keep you posted. I may just set a later time on Sunday nights (in which case I hope my eastern linkers would forgive me) or perhaps first thing Monday morning. Let me think about it some more and feel free to provide input but please remember there is no way I can possibly please everyone.
We ate some pretty tasty meals around here last week. Every single recipe was a hit and will be going into my Family Favorites Recipe Index if it’s not there already. Not too often that happens where we enjoy them all like that. Yay! If I had to pick my #1 favorite though it would have to be the Teriyaki Salmon in Foil. Delicious and SUPER easy to prepare but I will let you in on a little secret. I cheated just a little and used store bought teriyaki sauce instead to save time. Doesn’t get any easier than that and no pans to wash, well except for the rice pot but that’s not much 🙂
So I love how many of you are coming by here each week to link up and share your menus. Being overseas I’m a day ahead of you, so the times are all mixed up for me anyway. LOL I say do what you can and what doesn’t stress you out to the max. If your blog software will let you, maybe you can prewrite the posts and it will auto post them at the time you select – I don’t know if the Linky feature will work like that tho?

I’m SO glad your family enjoyed the Teriyaki Salmon in Foil from my website. My boys love this recipe too, though I must admit that when it comes to the veggies, my 11-year old son only eats the snow peas (he’s not a big fan of carrots).
I attended a seminar on omega-3 fats & health last week and was fascinated to hear about all the new research and recommendations on omega-3s (found big time in salmon — surprisingly, farm-raised salmon has more omega-3s than wild). Janice and I plan to record a podcast on omega-3s some time soon so everyone can get the latest scoop on this amazing fat. Lucky for all of us that salmon tastes so great!

just a quick note to take a look at the ceaser chicken pockets on Allrecipes – I found it from someone else’s menu blog and they use rotisseirie chicken, but I sub’d the perdue done its (on sale one week so I stocked up) and they were sooo delicious!

Please don’t stress out over your post time!! I’m one of those “Eastern Linkers.” My routine is that I do my Menu Plan Monday post early in the day on Sunday. I then link up to y0u sometime on Monday and add a line to my post about checking out other MPM’s linking to your post. Who knows what warmer weather will mean for my routine though!!

I usually post mine on Monday since right now, Sunday evenings are a bit crazy & I am working towards taking Sundays off all together which means…NO COMPUTER for me…otherwise I will be tempted to work! LOL!

This is my last week to link up for a while. Thanks for all the ideas Laura. I may pop in from time to time also. Seems like one of the aluminum manufacturer had all sorts of ideas of cooking with their foil pouches. Great ideas and easy clean up.

I completely sympathize with you Laura. Sometimes a schedule reduces stress, other times it seems to amplify it. I appreciate your posting menu plan Mondays – and even when I don’t participate, seeing Mr Linky go up reminds me to check and make sure my menu-plan is in place and I’m ready to go.
Take care of yourself first, the rest will fall into place as it needs to.
