Welcome to MPM! I had a fantastic food week last week and I hope you did too. I don’t know how many of you noticed but my menu was a little different than normal for me. My hubbie was away all last week so I got to cook the things I like and it was awesome! I’m not a big meat eater so it was a nice change to make up some recipes that didn’t center entirely around the meat as the main dish. My hubbie is also allergic to fish so I took advantage of him not being home to have two nights of fish, yum! The Herbed Tuna Sandwiches were delicious! The recipe still isn’t available yet on the Taste of Home website but I’ll post it if anyone is interested.
The only thing I didn’t get to in last week’s menu was the tortellini so I’m including it in my menu again this week but I found a different recipe that I’m going to try instead. This recipe isn’t available online either but I’ll post that for you today below.
Monday: Tortellini Primavera (see recipe below)
Tuesday: Beef Stew
Wednesday: Chicken Marsala
Thursday: Spud Special Soup
Friday: Chicken Pesto Pizza
Saturday/Sunday: Spaghetti or leftover buffet

I would love to see the recipe for the Herbed Tuna Sandwiches! I secretly like when my DH is out of town because it means much less cooking for me. The kids will eat any gruel that I put in front of them.

I put pesto on my homemabde pizzas for the first time last week and even the kids liked it. The chicken pesto pizza sounds great.

I’m like your hubby in that I don’t eat fish. I’m not allergic, I don’t think, but have had several adverse reactions as a child. As a result, I don’t cook it or eat it.
I feel badly for my hubby and my daughter, but the slight smell of it makes me sick.
Whenever we go out, I encourage my hubby to order fish in order to share it with my daughter.

I will often do that too. If my hubby goes out of town I’ll make things I normally wouldn’t make. I don’t know what I’d do if anyone in my family was allergic to fish….or dairy…or wheat! Well, I’d probably lose weight for one thing, but still. I love seafood. Sounds like a great menu. I have found recipes that call for whole wheat ravioli, but I have yet to find it…anyone have any tips as to where to look?

I loved our meals last week. we went from not ever knowing what to do for dinner, to having it right there and on the table when we were ready to eat. so am working on this weeks.. we have 2 days left from last week,where we went out and ordered in. it is so hard I find to just make a week’s menu when just the 2 of us. but am going to do it no matter what. stay warm everyone!!
