Menu Plan Monday ~ Nov 26th

I hope everyone had a joyous and wonderful Thanksgiving!

Last week’s recipe highlight is going to the Pork Chop Potato Casserole. It was easy to prepare and pretty tasty. I substituted with the low fat versions of everything (soup, milk, sour cream and cheese) to make it lower in fat and it turned out great. Next time I’ll add some kind of veggie to make it a complete meal in one.

I’ve been trying to get my Christmas baking figured out. I love big batch recipes because if I’m going to do it I just want to do a big batch of something and get it done. Easy simple recipes with no worries about forgetting to double one or two of the ingredients which as you can guess never fails to happen to me. Grrrr. So I was cruising around the Taste of Home site and found this recipe for Big Batch Cookies. I’m just curious if anyone else has some good tried and true big batch cookie recipes to share?

My little guy had a great 2nd birthday last week but would you believe he wouldn’t even try a bite of his Dora cake. What a kid!

So here is what we are eating for the week:

Monday: Fajitas

Tuesday: Slow Cooker Beef Stew

Wednesday: Glazed Pork Chops & Apples

Thursday: Leftovers

Friday: Mostaccioli Bake

  3. Delurking to ask–the porkchop recipe sounds great but what are “french fried” onions? Is that those little breaded onions that people use on top of the traditional green bean casserole or something? I have never made that and hope I don’t sound too clueless. The recipe sounds delish and I want to try it!

  4. Yes you are right. They come in a can but to be honest I rarely use them since they are so high in fat.

    I don’t know how “big batch” you want to go but I’m going to make the oatmeal cookies that I wrote about on http://takechargeofyourlife.blogspot.com (put in “oatmeal cookies” in the search box) again this year – each batch makes 60 and you can easily double that. It’s enough then for all the people you want to give. They are really easy, no-mess (a requirement in my kitchen) and a huge hit every time!

  11. Mmmm … fajitas. I realized as I typed up my menu that it looks like we’re living at a carnival this week. Pizza and hot dogs?! Next week’s goal: A bit more balance 🙂

  12. I’m trying to figure out my baking stuff too.

    Last year I waited until too long to get it all together and was running around at the last minute. This year I want to get all that out by the 17th.

    I’m not sure how I’m going to do it exactly this year but I’ve never done batch baking. I think first I need to get myself organized enough to figure out what I am doing or something.

  13. Somewhere at home, I have a big-batch sugar cookie recipe I used last year, and it was delicious. They are the kind you roll out and cut with cookie cutters, and the recipe makes a gazillion cookies.

    I’ll look for it tonight and email it to you if I find it! Can you tell how organized I am? hehehe.
