Menu Plan Monday – Oct 23rd
Welcome to another Menu Plan Monday! I can’t wait to see what everyone is having for dinner this week. Last week I made Chicken Bean Pizza….it was so delicious and even though I can’t link the recipe for you I can tell you how I made it. It is so simple. On top of any kind of pizza crust, add some pesto sauce, cooked chicken, diced tomatoes, can of black beans, some mozza cheese and some parmesan cheese and cook it up. Oh my it was so good!
Here is my menu for this week:
Monday: Fajitas
Tuesday: Crisp & Creamy Baked Chicken served over rice and with broccoli
Wednesday: Slow cooked Italian Pork Chops with Roasted Red Potatoes with bacon and cheese (these are yummy!!!)
Thursday: Leftovers
Friday: Beef stirfry (hubbie is cooking…yeah…this is one of his specialties!)
Saturday: Slow cooked Corny Chili

That is too funny – great minds think alike! 🙂 We’re having chicken on Tuesday and Chili on Saturday, too! 🙂 It’s the weather, I think – I love that it’s getting cold and we can enjoy all those “winter” type foods again!
Laura you have some awesome meals planned, the Crispy Baked Chicken looks soooo good, and so does the Chili, I’ll have to try those 🙂

Those potatoes do sound good. And I have “pretend” bacon so I can make them vegetarian!
I just love snooping in on this and some of the other “Menu Monday” posters!
Wish I could add to the list….but it’s way easier to cheat off of you guys!!!

I made your corny chili last week and it was good. My girls like it too. Before I made it my oldest told me she didn’t like chili, but she ate 2 servings of it.

Gail and Judy – I just buy the basil pesto sauce that comes in a pkg in the deli. It is thicker which is perfect for spreading on a pizza. So good!

Okay, I can’t post anything this week, but I’m hooked. Going to visit some other plans today for ideas. I’m really stumped here at home and need the motivation. 😉

I might try that corny chili recipe this week! I am planning on making a pot of chili anyway, so I might as well try something new!

Oh, to be so organized. I just don’t like cooking any more and the ‘thought’ of making a menu seems so much like a commitment.
