Welcome everyone…especially to any newcomers who are joining in this week for the first time! Can you believe it is already the middle of October! Where or where is the time going? Hard to believe my baby’s going to be one next month already!
So this week is going to be a pretty simple week for us menu wise. Hubbie had to go out of town for a couple of days so I’m getting a bit of a break. I love simple meals…I actually prefer them. I love breakfast for supper too and I notice many of you do this on occasion. Unfortunately hubbie isn’t a big fan of it so it doesn’t happen here too often but since he’s away we will this week…yeah!
So Saturday my husband let me sleep in and when I came downstairs this was waiting for me:
Yummy! I love omelets but for the life of me cannot make them myself so every once and awhile hubs will make one for me. You know what’s surprising about that? He is allergic to eggs and has NEVER ever tasted an omelet himself…isn’t that sweet?
Okay so on to my menu for the week. Four of the recipes I am making this week are from the Quick Cooking magazine Jan/Feb 2006 issue…..and can you believe it I’m unable to link any of them because they are recipes that are reserved for subscribers only on their website….sheesh. So if you subscribe to any of the Reiman Publications you should be able to view these recipes here. Sorry about that.
Monday: Pesto Chicken Pasta (L&T)
Tuesday: Whole Wheat Pancakes (L&T)
Wednesday: Chicken noodle soup and grilled cheese (we didn’t get to this last week)
Thursday: Chicken and Bean Pizza (L&T)
Friday: Apple Dijon Pork Roast and roasted potatoes (L&T)
Saturday: Burgers and Fries

I like making breakfast foods (for any time of day!) because they’re usually fairly easy to make 🙂 My husband doesn’t mind at least one big “breakfast” meal per day… yay! 🙂
Pesto Chicken Pasta sounds interesting… but I am not a subscriber to any Reiman publications. I guess if they want people to subscribe, they can’t give away too many free recipes online! I would much rather look through a magazine than browse online though. 🙂

We like breakfasts for dinner around here, too – but more often we have breakfast for lunch! A great and easy, nutritious meal in the middle of our school day.

Once again, you’re inspiring me to be more organized 🙂 The omelet looks good. Lately I’ve been on a quiche kick for breakfasts. Easy to make with those refrigerated pie crusts and soooo delicious.
