Hi friends! Welcome to September and getting back into routine and creating a weekly menu plan to help save our sanity!
I took last week off as we went on a road trip to drop my middle son off at college. It was very emotional for me even though I’ve been through this once before. However this time I am sending off a child with life threatening food allergies which is so incredibly difficult. I’m still trying to wrap my mind around it especially since my son is not so good about returning his mother’s texts and calls. Sigh. I hope to write more about this experience sometime soon since I have so many thoughts swirling through my mind that I think it will be therapeutic for me to share. It’s a lonely place to be so maybe it will help me connect with others that have perhaps gone through it before me.
With my son leaving there are just three of us left at home, two with no dietary restrictions and myself who eats Paleo. In other words, I’m now outnumbered. So we all sat down to figure out how meals will look going forward and we realized that I could go back to making regular dishes (9×13 casseroles for instance with regular pasta and cheese!) for my husband and son and freezing half of it for future dinners saving me all sorts of time! On these nights I’ll most likely make for myself some kind of simple seafood which neither of them of like anyway so it will work out perfectly. So from now on I won’t be sharing just Paleo recipes but will also get back to sharing a wider variety of easy kid friendly non Paleo recipes. I’m very excited to get my youngest into the kitchen more helping me out with dinner. Yay!
Now that fall is here, I’m looking forward to bringing on the soup recipes again, my favorite! Any other soup lovers out there? Funny thing is I never use to be. Couldn’t stand soup and it’s only been since I went Paleo that I’ve learned to love it 🙂

Monday: Long weekend dinner out 🙂
Tuesday: 15 Minute Tortellini & Broccoli Alfredo
Wednesday: Paleo Chicken Pot Pie Soup
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Scrambled Eggs with Smoked Salmon
Saturday: Easy Paleo Crockpot Beef Stew
Sunday: YOYO (you’re on your own!)

Hi Laura,
When my kids grew up and left it was hard for me to downsize dinners at first. I have found that most recipes that go into a 9 x 13 will fit easily into 2 8 x 8 dishes. I have some with their own lids which fit well in my freezer.
