Hey everyone, happy new week to you! If you haven’t already done so, it’s time to get menu plan happy and make it happen. Who couldn’t use a little less stress and chaos in their lives? Don’t complicate life more than you need to because dinner shouldn’t be something we stress about. Okay? Okay 🙂
I got personal on the blog last week, not sure if you saw it or not. But if you didn’t, I shared more about my autoimmune disease and how the Paleo diet helps me with that. Since inflammation is known to be at the root of most diseases, reducing this inflammation has helped heal the guts of so many people dealing with all sorts of illnesses. It was such a beautiful spring day for us here yesterday. My hubby grilled a delicious pork steak dinner which was such a yummy treat considering we don’t normally do anything big for dinner on Sundays. There’s nothing like a BBQ dinner on a sunny day, yay!
Here’s what we’ll be eating this week.
My Weekly Menu Plan:
Monday: Lettuce Wrap Tacos
Tuesday: One-Pan Paleo Bacon Wrapped Chicken Thighs served with roasted potatoes and broccoli
Wednesday: Potato Creamy Potato Leek Soup
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Paleo Salmon Cakes
Saturday: Smoky Grilled Pineapple Burgers
Sunday: YOYO (you’re on your own!)
