Hi everyone! I hope you had a wonderful weekend. Today’s a good day to get organized for the week starting with a weekly menu plan. We had a beautiful sunny weekend which was just what we needed to melt all our snow. Whoot!
On Saturday we took a drive into the city for the day (shopping, yay!) and it was so nice with the bright blue skies and warmer weather. And of course what’s not to love about a perfectly timed drive home to catch a lovely sunset. Such an awesome way to end a great day!
Recipe Highlight:
Okay last week’s recipe winner definitely goes to the Chicken Pot Pie Soup. I know the picture doesn’t look like much but wow was this soup ever good. It is basically a potato soup with a little extra step to make it creamy without any butter or milk. I also just used a cooked rotisserie chicken from the grocery store as a bit of a shortcut. Yum!!
My Weekly Menu Plan:
Monday: Oven Baked Chicken Wings served with raw veggies
Tuesday: Slow Cooker Honey-Garlic Baby Back Ribs (using coconut aminos instead of soy sauce) served with rice and broccoli
Wednesday: One Sheet Pan Maple Dijon Pork Chops
Thursday: Leftover buffet
Friday: Pizza Party Friday Night! and for me Paleo Egg Salad
Saturday: Portobello Rosemary Garlic Burger Stacks
Sunday: YOYO (you’re on your own!)
