Hi everyone! How are you today? We enjoyed a very very cold weekend here (-30C/-22F) but I loved every minute of it. I love the cold weather with the bright sun shiny days. Of course we can’t stay out in it long but we can go for drives (with heated seats!) and get our Vitamin D that way. Bella loves it too, isn’t she sweet 🙂
We’ve got a busy week ahead so you’ll notice that this reflects in my menu plan. Keep it simple when you know you are going to be busy, quick and easy and keep stress away.
Recipe Highlight:
One recipe that I absolutely loved from last week was this one for Bacon Wrapped Pork Tenderloin. Oh my goodness, so good and it created a delicious little sauce that I couldn’t get enough of. Highly recommend!

Monday: Maple Bacon Pancake Bars
Tuesday: Eggs Baked in Portobello Mushrooms served with spinach salad and Honey Lime Dressing
Wednesday: Skinny Shrimp Scampi with Zucchini Noodles
Thursday: Leftover buffet
Friday: Pizza Party Friday Night! and for me Easy, No Mayo, Throw Together Tuna Salad
Saturday: Hot & Sweet Ginger-Garlic Chicken Thighs served with rice and broccoli
Sunday: YOYO (you’re on your own!)

The shrimp scampi with zucchini noodles sounds so good! We’ve been eating low carb for a few months and I’m desperately in need of some new recipes because we are getting tired of our old favorites.

I’m not a fan of the cold (we have it today) but I do like your idea of taking a drive in it! We need to do something to get out of the house for a bit. I definitely need to check out that recipe for the maple bacon pancake bars, sounds yummy!
