Hi everyone! How are you today? We enjoyed a very very cold weekend here (-30C/-22F) but I loved every minute of it. I love the cold weather with the bright sun shiny days. Of course we can’t stay out in it long but we can go for drives (with heated seats!) and get our Vitamin D that way. Bella loves it too, isn’t she sweet :)
We’ve got a busy week ahead so you’ll notice that this reflects in my menu plan. Keep it simple when you know you are going to be busy, quick and easy and keep stress away.
One recipe that I absolutely loved from last week was this one for Bacon Wrapped Pork Tenderloin. Oh my goodness, so good and it created a delicious little sauce that I couldn’t get enough of. Highly recommend!

Monday: Maple Bacon Pancake Bars
Wednesday: Skinny Shrimp Scampi with Zucchini Noodles
Thursday: Leftover buffet
Saturday: Hot & Sweet Ginger-Garlic Chicken Thighs served with rice and broccoli
Sunday: YOYO (you’re on your own!)
