Hi everyone! I hope you are all enjoying a lovely relaxing long weekend. Even though I won’t be getting my groceries until tomorrow I still plan my menu out on Sunday night as usual. It’s just nice to get it done and out of the way.
So one of the reasons many people have trouble sticking to their menu plan each week is they get a little too ambitious with their recipe selection. Keep it simple is always a good game plan because inevitably something always comes up and we need to get dinner on the table and fast. So keep it simple! This week we had breakfast for dinner twice! Nothing wrong with that. These Paleo Pancakes were delicious and then last night I had scrambled eggs for dinner. Doesn’t get any easier than that!
Also break out your slow cooker and prepare dinner early in the day. I’ve been updating my slow cooker recipes page like crazy. Check it out HERE!
My Weekly Menu Plan:
Monday: BLT Avocado Lettuce Wraps
Tuesday: Grilled Basil Garlic Chicken Breasts served with broccoli
Wednesday: Paleo Italian Meatballs served over spaghetti squash
Thursday: Leftover buffet
Saturday: Eggs Baked in Portobello Mushrooms (without the cheese)
Sunday: YOYO (you’re on your own!)
