Hi friends, happy last Menu Plan Monday of June! Summer vacation has finally started for us here in Canada, we end a month later than most of my US friends I know but the kids also don’t go back to school until September. I love having my ducklings home with me.
I had such a great birthday last week. Thank you to everyone who left messages here on the blog and over on Instagram. You really all helped make my day so special. The night before my birthday one of my fabulous girlfriends surprised me with Gluten-Free Shepard’s Pie for dinner along with a spinach salad and it was absolutely delicious. What a treat I tell you!
I was also so happy that my daughter made me a yummy gluten-free apple crisp on my birthday. Apple crisp is my all time favorite dessert and gosh was it ever good. I’m planning on posting the recipe soon.
So tomorrow we celebrate Canada’s 147th birthday. Happy Canada Day to my Canadian readers and for later this week I want to wish my US neighbors a Happy July 4th.
Two years ago for Canada Day I made this delicious Canada Flag Cake. It was really yummy.
This year I’m going to go with cupcakes and I found a recipe online for Maple Bacon Cupcakes that sounds so good. Check out the recipe on video below, yum! I can’t wait to try it because I haven’t met a recipe with bacon I didn’t love 🙂

Monday: Garlic Roast Beef Sandwiches
Tuesday: Happy Canada Day ~ we’re going on a picnic and I’ll be making Maple Bacon Biscuits and Maple Bacon Cupcakes (both I’ll make gluten-free substitutions to). I’ll also bring a fruit salad and some snack foods.
Wednesday: Roasted Chicken with Rosemary
Thursday: One Pot BBQ Chicken Pasta (using leftover chicken)
Friday: Crockpot Cheesy Beef Tacos
Saturday: Greek Turkey Burgers with Creamy Tzatziki Sauce
Sunday: YOYO (you’re on your own)

I can’t wait to hear how the Maple Bacon Cupcakes turn out. I love bacon, but I’ve never tried it in a sweet recipe…other than the time I tried chocolate-covered bacon. I wasn’t a big fan, lol.
