Happy Monday everyone! Or as happy as Mondays can be anyway. Hope you all enjoyed a nice Mother’s Day yesterday. I wasn’t feeling well so I stayed in my jammies all day and my family took good care of me. I had breakfast and lunch in bed and then for dinner my husband picked up take out. Any day that I don’t have to cook is the best day ever!
My daughter even made me some delicious homemade cinnamon biscuit buns so I couldn’t not have one. It was worth the wheat cheat cause they were really yummy 🙂
Recipe Highlight:
Last week’s recipe highlight definitely goes to the Slow Cooker Cheeseburger Casserole recipe. Seriously so easy to throw together and so delicious. I also loved that it was nice and creamy without any canned soup. I think next time I would throw in some corn as well to make it a well-rounded meal 🙂
Teacher Appreciation:
We celebrated Education Week last week by throwing a nice beef on a bun luncheon for the teachers at my youngest son’s school. I purchased the most adorable printables off of Etsy to use and it turned out so nice. Thank you to teachers everywhere for all you do!
Go love on your teachers today! Need some more ideas, check out my Teacher Appreciation Ideas Pinterest Board.
My Weekly Menu Plan:
Monday: Citrus Herb Chicken served with rice and broccoli
Tuesday: Make-Ahead Unstuffed Shells (I’ll be making two of these…one to take to a friend and one made with rice pasta for us)
Wednesday: Easy Crock Pot BBQ Pork Sandwiches
Thursday: Leftover buffet
Friday: Baked Tacos
Saturday: Cheesy Sausage Potatoes
Sunday: Picking night!

I am so glad you enjoyed the cheeseburger casserole. Corn would be great in this. It is one of those dishes you could easily change up. I hope you have a great week.

What a lovely spread you put on for your teachers! I can tell you that as a former teacher, the teachers at my school and I really did appreciate being appreciated 🙂

I am so in awe of what teachers do everyday in support of my kids especially after this year of homeschooling my oldest. Yikes, it’s so hard!

Those printables are adorable! I am so glad people offer stuff like that because I am soooo not crafty. More like wanna be crafty.
I love the sound of those unstuffed shells. Yum!
Laura says
Gosh printables have saved me on so many occasions. People always think I went way out but little do they know lol. I just couldn’t resist these ones 🙂
The unstuffed shells are a family favorite…so good!!!

Re: “wheat treat” — are you GF? Because if so I am sure these can be made with Bob’s GF or another GF flour. They look yummy, by the way.
Laura says
I am GF but not because I’m celiac or anything. Just don’t like what it does to my body. I don’t really miss it all but my daughter made these for me and forgot that I couldn’t eat them. I ate them anyway because she’d gone to so much trouble. It was worth it 🙂

Saw your menu just as I was headed to the grocery store. You saved my family the same old boring menu. I added your Unstuffed Shells and Baked Tacos. Thanks!
