I’m alive!  I am finally over the flu here, thank goodness!  We may not have eaten the healthiest meals last week but dinner got on the table one way or another.  Sometimes we just need to cut ourselves a little slack.  This week I’m back on the band wagon and a huge thanks goes out to my family for filling in the gaps.

I hope you all had a sick free week in your house.  How did your menu plan turn out?  Highs?  Lows?

New Menu Planners:

I’m super excited to share with you this awesome resource for menu planner wannabees.  I stumbled across this free online video that is a great menu planning presentation with some practical information for how to get started.  I think you’ll find it very helpful.  Let me know what you think!

Also my friend Jami, from the blog An Oregon Cottage, has just released the 3rd installment in her seasonal recipe books titled Winter Dinner Menus.  In each 22-page “ebooklet” you will find five weeks of easy dinner menus for families using wholesome ingredients along with the shopping lists for each week’s menus.  This recipe booklet is free to all An Oregon Cottage subscribers.  More information here.

Potluck Dinner Club:

This week I’ll be heading to our monthly dinner club again.  The theme this time is bedtime snacks which I am loving so much.  I’m a big time snacker and my downfall isn’t all the sweet stuff.  Nope, I’m a total salty girl instead.  However when I saw this recipe for yummy Homemade Caramel Popcorn over at Gimme Some Oven I couldn’t wait to give it a try.  It just looks so good!!

My Weekly Menu Plan:

Monday:  Black Bean & Cheese Quesadillas

Tuesday:  Easy Crock Pot BBQ Pulled Pork served on buns and served with raw veggies

Wednesday:  Leftover buffet

Thursday:  Happy Valentine’s Day!  Bacon-Wrapped Beef Filets served with Hashbrown Potato Cassserole, veggies and for dessert No Bake Cherry Cheesecake (family favorite!)

Friday:  Homemade Pizza (dough in the bread machine)

Saturday:  Low Fat Turkey Bacon Wraps

Sunday:   Picking night!

    I’m so glad that you are feeling better! I had a fun and relaxing weekend celebrating my birthday. Now it’s back to reality. Here is our menu for the week: (fingers crossed that the links work this time!)

    Sat – pizza and a walk on the beach

    Sun – Italian Veggie Pie, broccoli, salad

    Mon – Italian Bean Soup, French bread, salad (didn’t get to this meal last week)

    Tues – Potato and herb frittata, roasted brussel sprouts

    Wednesday – Curried Vegetables and Dahl (Moosewood Restaurant Cooks at Home cookbook), brown rice, naan

    Thurs – leftovers

    Friday – Pizza or leftovers

    Thanks so much for hosting again. Glad you are over the flu! My snacking downfall isn’t so much sweet or salty, but those nights when I need both a sweet AND a salty. lol

    I have black bean and cheese quesadillas on my menu too. I’m trying a new recipe that includes corn that I found here last week!

    Thanks for hosting this every week Laura! I am on my 3rd start week of planning (and mostly following!) a menu plan. It feels great to be back on the bandwagon! We are eating so much better and I’m loving cooking again! Thanks for being such an inspiration!

I’ve moved to monthly menu planning, and I have to say that although it took awhile at the first, it’s nice to have the rest of the month “off” from planning. :) Have you ever done a monthly menu? Not sure it will work in the long run for us…
