Hi everyone, I’m back! It was so nice to get away. In fact it was the first time hubby and I have gone away for a week together, without kids, in 12 years! At the recommendation of some of my awesome Facebook followers we went to Siesta Key, Florida and stayed near the stunning Crescent Beach. Loved it! I’m going to do a whole separate post about our trip because even though we had such an amazing time it wasn’t without chaos. No matter how prepared I think I am, chaos seems to be my ultimate traveling companion whenever I have to fly somewhere. In fact just two hours before we had to get on the plane we almost had to cancel the entire trip. More on that later but for now check out this awesome view. Beautiful!
So again I would like to thank SnoWhite for doing such a great job hosting for me last week. I hope you were able to get some delicious recipes from her site. Our kids will be at their grandparents for one more week so we are keeping things pretty simple around here this week. I had some yummy salads while on holidays and now I’ve got a craving for them. I know many of you are experiencing some pretty hot weather right now and will probably be keeping things pretty simple as well as a result, am I right?
Here’s what we’ll be eating:
Monday: Shredded Chicken Salad (I’ll cook extra chicken for tomorrow’s meal)
Tuesday: Jamaican Jerk Chicken Wraps (using leftover chicken)
Wednesday: Veggie Salad-Pasta Toss (with some sausage added in for hubby)
Thursday: Grilled Ham Panini
Friday: Ginger Steak Salad
Saturday: Smoky Grilled Pork Chops served with Foil Potato Packets and roasted peppers
Sunday: Dinner out!

I’m so glad you were able to enjoy your vacation, even if there were a few, “bumps” along the way. I LOVE the beach shot, there is just something about the ocean that relaxes me.

July 24th – Salad & crudités served at lunch & dinner
Sun. – Pizza (boys requested & assisted)
Mon. – Spaghetti, cheese bread
Tues. – Octopus or rocket dogs, macaroni & cheese
Wed. – ****T’s 5th birthday!**** ? His choice-Mexican Restaurant ($5 coupon)
Thurs. – Grilled chicken (from freezer), green beans, corn on the cob
Fri. – Barbecue, burgoo (from freezer)
Sat. – Cedar plank salmon or Grilled shrimp or Basil tomato shrimp, couscous, veggies (whatever is at the Farmer’s Market)
Lunches – leftovers, wheat penne with garbanzos, tomatoes, and corn, pbj, chicken nuggets, veggies, spaghettios, grilled cheese sandwich, quesadillas, eggs, tuna salad or melts, pizza, soup, mac & cheese, loaded nachos
Crudites are generally carrots, broccoli, grape tomatoes, & red bell pepper strips

A vacation alone with the hubs sounds like heaven. I am glad youu had a nice time. As for menu plan this week I am referring back to last week because I am also on vacation and doing lots of running around. Though I am still keeping close eye on portions and calories because I am in the homestretch of my weight loss. 40 Pounds down and about 5 more to do. 🙂

Wow, Siesta Key! That’s a far cry from Canada! My daughter’s roomate’s family lives very near Siesta Key and we are planning on going down once it cools off a bit. I prefer the beach in October, lol! Can’t wait to read your post about it!

If I would have realized you were heading this way I would have invited you for dinner and to see the new house – yes, we finally moved in just last Thursday!!
