Hello beautiful people! Thanks for all the well wishes last week, I’m feeling much better. I do apologize to anyone that has sent me an email in the last couple of weeks, I really am going to try to get to those soon!!
So the biggest recipe hit of the household last week turned out to be the Potato-Topped Mini Meatloaves. So much so in fact that my daughter has requested them again this week for her 14th birthday! Sweet for me because this was one easy recipe to cook up, yay!!
A couple of weeks ago I posted a picture of the chalkboard menu board I use and a couple of you asked about where I got it. I got it on clearance at a little gift shop here in Alberta and there isn’t a brand or anything on it. It was just one of those things I saw buried in a 50% off bin tucked away in the corner and I had to snag it. Since the boxes are a little narrow, I do find it a little hard to write my meals on it sometimes though. I kind of have to write sideways to make it fit. Other than that, it’s been working great 🙂
I know many of you are interested in the magnetic type of menu boards though and I just recently found someone who does make and sell cute ones like these:

Not long ago, my friend made mini meatloaves with potatoes and called them “cupcakes”…she had a cuter name, but she used the potatoes as the “icing” and the mini meatloaves as the “cake” part. They were very cute. That could go along cute with your daughter’s birthday theme. Happy birthday to her!

Those potatoe meatloaf tops look AWESOME!! I may try those next week. I attempted to put together a monthly menu plan and freezer cook for the month however the day went by way too fast. However I did prepare ahead of time all the dinners for the week. Woohoo!

I made your meatloaf cupcakes and potato icing last week (I used turkey instead of beef) and my hubby LOVED them. He was telling all of our friends what an awesome meal it was. And it was soooo easy. The potato mini meat loaves sounds yummy. Will have to look at that recipe. This week we are having impossible tuna pie, crock pot chicken with potatoes, tortilleni and hamburger and a potato soup and leftovers. Didn’t do much menu planning, which I should have. Will do better next week. Life has been stressful, thought provoking but manageable lately. So thankful for notebook I use for all shopping list and menu planning, so easy! This is my first time here and I’m intrigued! I need some menu planning in my future. For those people who like the menu chalkboard – why not get some chalkboard paint and paint the front or back of a pantry door or doors of a cabinet in the kitchen? Then you’d have plenty of space to write out the menus. You could label the days of the week using letter stickers (with a good adhesive), magnets, paint – possibilities are endless. Oh, and you could also layer it with magnet paint to add your days of the week or your meal magnets.

You often have “perogies” with your meals. I’m from the south (Austin) so I had to google it. So it’s basically a dumpling; a little pocket of dough filled with veggies/meat. Do you make these yourself, or do you buy them? Are they baked or fried or what? I’m pondering perogies…….

Perogies are so yummy and homemade are definitely superior however they are a lot of work to make so I’ve only done it a few times. We usually buy frozen and boil them up on the stove. I like them plain dipped in teriyaki sauce but many people do like to fry them up with bacon and/or onion.
