If you are struggling to stick with menu planning or just needing a little encouragement you MUST go read through all the comments on this giveaway post. Let me tell you there is some menu planning love going on, whoot!
My favorite meal from last week definitely goes to the Lasagna Soup and Whole Wheat Biscuits. Both were really yummy. I made the soup up earlier in the day (when I had more time) minus the pasta and cooked it on low for a couple of hours. I added cooked pasta just before dinner. Easy!
What were your recipe highlights from last week, feel free to include recipe links in the comments. I love checking out tried and true recipes!
Speaking of tried and true recipes, last June I put up a post and linky list asking readers to link up their recipe index pages. Unfortunately I was using the old linky list at the time and now all those awesome links have disappeared…grrr. I referred to it quite often for recipes as index pages make it super easy to search by food category (ie: main dishes, breakfast, etc). Anyway I’ve decided to do it again so watch for that post this week sometime and plan to come on by and link up your recipe index! Here’s mine to give you an idea of what one is if you aren’t sure. Do you have one?
Here’s what we’ll be eating this week:
Monday: Potato Kielbasa Skillet
Tuesday: Garlic & Soy Chicken Thighs served with perogies and corn
Wednesday: Caramel Apple Pork Chops served with rice and broccoli
Thursday: Leftover buffet
Friday: Slow Cooker Beef Stew (family favorite!)
Saturday: Waffles {of insane greatness}
Simple Supper Sunday

I have to try those waffles if only for the title! Actually I clicked over and they look really good. I’ve been looking for a recipe with a little more “crisp” to them!
Have a great week!

Thank you for the linky! Defnitely going to try those waffles. I ordered a waffle maker the other day with SwagBucks. My kids don’t know it yet, so they will be super excited. 🙂

I’ve got to try your stew recipe – I have tried a couple but haven’t found one I’m just in LOVE with yet. I’m trying to incorporate more crock pot meals into our planning because it saves my sanity some days! 🙂

You have awesome giveaways! As for the trip with you to NYC and the container store, I’d love to win that, but I’d be picking your brain about blogging stuff and less about containers 😉
Miss Mommy/Emily says
I love the idea of the lasagna soup- yum!
Our highlight last week was Apple & Rosemary Chicken- super easy, in the crock pot, just a few ingredients, and my kids loved it!

Awhh…I’d love to hang out with you in NYC! I love the board too though 🙂
How did I miss that Lasagna Soup last week? I made oven baked chili yesterday that smelled just like lasagna when it was cooking. I bet it’s similiar.
Thanks for hosting Laura!

Laura says
How far in the process do you get? Are you able to add your name, url and email address after clicking on the blue link?
Wendy @ Celiacs in the House says
I like Monday and Tuesday at your house for easy kid-friendly meal ideas. We’ve been trying chicken thighs recipes a lot. Easy, flavorful and cheap. And my kids love ’em.
Laura says
I love chicken thighs and prefer them to chicken breasts!

Just wanted to say thanks for including my Caramel Apple Porkchops! I know you will love them! 🙂
Jami @ An Oregon Cottage says
Laura, that’s too funny- I bet a lot of people would like to hang out with you, I know I would! It’s probably just the travel part of it. 🙂
Hey, I know you use a bread machine, but you might like one of my family’s favorite breads I posted in a super easy tutorial using a food processor to knead. It’s so good, in fact, that I’ve dubbed these baguettes “The bread you can’t stop eating.” 🙂 See what you think (you could sop up some of your favorite stew juices with it!):

Caramel Apple Pork Chops….I am going to have to try those and see if they can get me out of my current chicken obsession…or at least give the hubs a break.

Mmm…beef stew and waffles, such comforting foods for January. I have waffles on my menu for breakfast later this week and want to try the waffles you’re having because who can turn down waffles of insane greatness?

Hmmm… I may have to try those Caramel Apple porkchops this week too, depends on how tomorrow looks time-wise! My new blog goal for the week is to get up an index of recipes… I am glad you posted about it because I’ve been meaning to do something similar for a while and never thought of just posting it on my blog. That would make it so much simpler to link to too! 🙂

I tried the original version of Waffles of Insane Greatness yesterday – they were REALLY, REALLY good!!!
My menu highlight from last week was Buffalo Chicken Spaghetti from Cooking During Stolen Moments (http://stolenmomentscooking.com/buffalo-chicken-spaghetti/) – it was delicious!!!
Queen of the House says
Wow! I LOVE your recipe index! I will need to do that too!!! 🙂 It might be a little trickier in blogger…but I hope to figure it out! 🙂
Laura says
You can always just create a post with your list of recipes links.

I love reading the menu plans. The lasagna soup looks great….can you tell me how much meat you used? Thanks!
Laura says
I used one package which I think is one pound.
Tiffany says
I have the apple pork chops on my menu for this week. These sound so yummy! I love apple flavor with my pork chops. I usually pan fry mine then add a shot or two of apple vodka and cook it down. Thats pretty yummy, but I can’t wait to try this one.
Catherine says
We tried the Caramel Apple Pork Chops last night. I bought thinly sliced chops and they got a little overcooked. Next time, I’ll reduce the cooking time. Pork chops are new for me….my husband was happy to see them on the table. They were yummy and I will definitely try this one again!
Jenne- WOHM says
I feel stupid for asking this question but can anyone give me ideas of all the meals they use for one month of meals? it is hard enough for me to come up with meals for one week (I’m trying new ideas, maybe too many). I would love to make one of these (would rather buy but don’t see where we can do that) and have no clue as to what meals I would put down for a variety for the month…. Thanks in advance:)
Laura says
Hi Jenne,
Have you checked out this site:

Had the carmel apple pork chops for dinner tonight. They were delicious and my family said the recipe was a “keeper”. Thanks so much!
