Hello my friends! I hope all my Canadian readers are enjoying a wonderful long Thanksgiving weekend. I had my best girlfriend come visit me for two days and we had such a great time. We had our Thanksgiving dinner on Saturday night because she had to leave early Sunday morning. Due to our limited time together I wanted to keep things as simple as possible in the meal department. This Slow Cooker Ham recipe just didn’t get any easier to throw together. Highly recommend it! The Cauliflower-Cheddar Bake was also really good (and could be made ahead) but word of caution, if you are using fresh cauliflower instead of the frozen as directed, use additional liquid.
I know those of you living in the US don’t celebrate for another month yet but it’s never to early to start thinking about your holiday menu 🙂

Your meals sound really good- I tried pierogies for the first time recently (frozen) and wonder how the heck I’ve missed them all my life. I think I’ll add them next week, thanks for the reminder.

Laura, as usual your menu sounds lovely! I haven’t tried the rotisserie style chicken but I sure need to. I make Mimi’s Sticky Chicken and it’s better than any rotisserie chicken I’ve ever had but it would be nice to have an alternative for those times when I just want to throw the ingredients in the crock and have it ready when I get in hours later. Hello Laura!! Thanks again for posting your thoughts on easy/yummy recipes. This is so helpful! I just clicked through to the ham recipe…do you really cook this without any liquids in the Crock Pot? I think I’d be nervous to do that…but tempted, since the recipe sounds delightfully simple! 🙂 (Incidentally, I prepped your crock pot minestrone recipe tonight…I’m going to plug it in in the morning–can’t wait to try it!!)

No liquid can you believe it? I was surprised by that too but it ends up creating its own juices with the sugar. Yum!

The minestrone was a HUGE hit–even my husband loved it, and he doesn’t usually like soup! My mother and Uncle both (seperately) tried left-overs and both have asked me for the recipe!! Thanks again Laura–I’m really excited to have that one in my arsenal now! 🙂
