Hello to another week.  Anyone else feel like they are flying by?  My goodness so much happens around here in a week these days that I barely have time to catch my breath it seems.  My kids have gone to Ontario to visit their grandparents for a month so I can finish up writing my book and packing up the house.  I have until the end of the month to get it all done but I’m struggling with focus.  We did manage to find a house in Alberta but are still waiting for ours to sell here.  Such a relief to know that I won’t be homeless when I move, yay!

Needless to say I’m planning my menu for one and it’s hit or miss whether or not I’ll even stick to it.   I mean I’d be happy to just have popcorn for dinner but I do need to clean out my freezer so I’m going to incorporate some of that into my plan and see how it goes.

Yesterday I intentionally planned something easy to bring to my church potluck.  Unfortunately this is what happened to my biscuits.

Oops, you win some, you lose some.  Plan B was Jello.  It’s all I could come up with at short notice LOL.

Here’s what I’ll be (hopefully) eating this week, how about you?

Monday: Toasty Egg Sandwiches

Tuesday: Zesty Slow Cooker Barbeque Chicken

Wednesday: Hearty Chicken Pesto Pizzas (using leftover chicken)

Thursday: Spinach Salad with Tortellini

Friday: Leftover buffet

Saturday: Happy Birthday to my awesome hubbie!   BBQ Shrimp Pasta Salad

Sunday: Church Potluck ~  Bread Bowl Seafood Dip (love this one!)

Hope you are able to get some time to focus! That is awesome that their grandparents helped out, so you can get that time you need to finish things up. What a blessing!

It may sound horrible to some, but red bull is the only way I’ve made it this far in college! I can’t focus some days without it. Writing those papers only requires one or two, but it gives me so much focus!

I’m 100% Southern and have never attempted homemade biscuits. My grandmothers would be so disappointed in me! So don’t feel bad about those slightly over browned bottoms, I would have taken them anyway.

Good luck with the book. Mine is almost finished – it’s just being proof read and should be good to go later this week – woo hoo;-D
What a blessing grandparents are. You are very lucky.
I don’t envy you and the move. I’ll pray that all goes smoothly and well for you.
The last time we moved we ended up living with my parents for 3 months in London waiting for the house we wanted to buy and then they pulled out the week after we moved! I LOVE the house we’re in now though and am just so thankful my parents were kind enough to help out.

Not sure yet what I will be planning for the week… we were looking to grill out but it has not stopped raining since yesterday! I am not complaining because we definitely need the rain. =)

It really seems like everyone is writing a book these days, doesn’t it? Feel like every site I go to someone has released a book, is getting ready to, or is writing it. Hmmm, I want to write a book! :-) LOL!

Wow. Finishing a book and moving? You are one very brave woman. I just finished celebrating Moving Day here in Quebec (we moved about 10mins down the street to a smaller apartment). The place looked like an esher painting after everything was put into the apartment. Now, just 4 days later – things are looking much more settled and far cleaner than they did on moving day.

I’m always looking for a use for leftover chicken and so far, the only good use I’ve found is for shredded bbq sandwiches. But, pizza?! That’s ingenius. That pesto chicken pizza will be on our menu soon, I can guarantee that.

I made a pizza with pesto and chicken on it this week also and my hubby couldn’t stop eating it. :)

I’m glad you found a house to move to!! That’s an answer to prayer. Now just sell the other one and it will all be good. I know God’s been dealing well with 2 missionary friends, both of their houses sold. So it’s yours next!
And for dinner this week, Pork loin chops, BBQ chicken, Comfort Meatballs and spaghetti …..all for right now…
And am using the notebook method to write down things I need to do and I write down menu plans and prayer requests. Thanks for the inspiration….I couldn’t find a 5×7 notebook I liked or not made in China. So got a bit bigger one, made in the USA, Dollar Tree. Have a great week! Hugs and enjoy the quiet. Will have to check out your book!

That chicken pizza sounds great. We’re cooking up rotisserie style chicken this week and using the leftovers for chicken fried rice and chicken enchiladas.

Yummy yummy menu! Enjoy the time by yourself to finish up your tasks. So happy to hear that you found a new place to call home. Happy bday to your hubby! And everyone loves Jello. My 3yo helped make red white and blue Jello yesterday for the 4th. She put them in Mickey Mouse dixie cups. =p

Looks like a yummy week at your house, Laura. We had roasted chicken last week and I discovered an AWESOME recipe (Crunchy BBQ chicken wraps) for using leftover roasted chicken. I did a recipe review of it on my Menu Plan Monday post this week. I may have to try your chicken pizza next time we have leftover chicken. There are so many great things a person can do with leftover chicken! All the best with finishing your book!

I know what you mean about the weeks flying by so fast. I don’t even have kids or any reason why summer would be different from the rest of the year, but I still feel like the days are accelerating past!

When we don’t have kids at home, I’ll buy a rotisserie chicken and cook a couple of veggies. That lasts us three days, the last day being chicken vegetable soup. :)

Cooking for one is hard! Two of my kids are gone for the rest of the summer to visit their other parents’ and that changes my meal planning a lot as well.

Stay focused on your book! I know that can be hard!

I’d like to try that slow cooker chicken. I’m always looking for new recipes to make use of my two crock pots and we try to eat a lot of chicken to keep the cost of food down by not eating much beef.
