Hello my friends! Welcome to another edition of Menu Plan Monday! I hope everyone had a lovely relaxing weekend. My husband is here for another weekend visit so I’m keeping this short and sweet today 🙂

Monday: Cheese-Stuffed Meatloaf (carried forward from yesterday as we went on a hot dog roast for Mother’s Day instead)
Tuesday: French Toast Sandwiches
Wednesday: Chicken & Ravioli Carbonara
Thursday: Leftover buffet
Friday: Southwestern Soup served with Bread Machine Wheat Bread
Saturday: Dragon’s Creamy Shrimp Pasta with Mushroom and Peas
Sunday: Church Potluck ~ Hashbrown Casserole

You really do a great job of menu planning even when your husband is gone. When my husband is out of town we usually eat cereal and sandwiches!
I have one child who would love those French toast sandwiches. I might have to make them for her!

Another church potluck… yum! Our church never has them!! Your chicken and ravioli carbonara sounds really good – I get stuck in a rut making the same Italian meals over and over again so it’s nice to get ideas for new recipes. Have a great week!

I’m joining in for the first time — I bookmarked the recipe for the bread. Do you make it a lot? I’m getting a bread machine in a few days — buying 100% whole grain bread every week is expensive!

Just getting back into the menu planning habit — been away for a few months. I have been eating lower-carb for about six weeks, so I am trying to stick with that for myself while still providing items for the rest of the family — not easy! That creamy shrimp pasta looks yummy — I guess I could just keep the pasta separate and combine at the table so that I could eat some, too 😉

I have to be honest, I’m daunted by thinking about planning a menu for an entire week for all 14-21 meals (My husband works from home, so every meal is a meal-not necessarily left overs in a brown bag). So the baby step I came up with is to take a week or two to write down what I do actually end up making for each meal and what ends up being eaten as leftovers. I’ll also start a list of our favorite meals and hopefully in the coming weeks I’ll be brave enough to plan a whole week ahead.

The newest recipe I’m loving is one for mango-pineapple salsa I found at Taste of Home (http://www.tasteofhome.com/Recipes/Pineapple-Mango-Salsa-2). It tastes great with fish, pork chops, chicken, etc. I even like it with chips, or just a spoon.

I’m new to your blog, so this might seem redundant to previous posts, but I love the idea of having a leftovers buffet! I cook all the time and I hate to see extra food go to waste. Thanks for the wonderful idea!

I hate wasting food too so that’s why I always schedule in a leftover day. We line all the leftovers up on the counter and everyone can pick and choose what they want. It works really well AND I get a night off from cooking, woohoo! 🙂
