You really do a great job of menu planning even when your husband is gone. When my husband is out of town we usually eat cereal and sandwiches!
I have one child who would love those French toast sandwiches. I might have to make them for her!

I love Hashbrown Casserole! I’ve always planned to try to make it myself, but never have. I’ll be giving it a try. Thanks for sharing the link!

Another church potluck… yum! Our church never has them!! Your chicken and ravioli carbonara sounds really good – I get stuck in a rut making the same Italian meals over and over again so it’s nice to get ideas for new recipes. Have a great week!

Enjoy the time with your husband :) And I’m glad you put a hashbrown casserole recipe on your menu this week, I have been poking around for one.

I’m joining in for the first time — I bookmarked the recipe for the bread. Do you make it a lot? I’m getting a bread machine in a few days — buying 100% whole grain bread every week is expensive!

Hi Rachel, yes this bread recipe is a family favorite of ours and I make it often. Yummy!

I love the French Toast Sandwich idea! So yummy.

I just got off a blogging break, so not too many new things in our kitchen lately.

Thanks for MPM!!!

It’s nice that your church has potluck Sundays! I wish we’d have those here. It’s nice to visit with friends that way.

Our biggest hit last week was homemade poptarts via the Smitten Kitchen. We used nutella filling!

That Hashbrown Casserole looks great! I’m definitely going to try that one — I think it would be a great side with brisket this weekend

Just getting back into the menu planning habit — been away for a few months. I have been eating lower-carb for about six weeks, so I am trying to stick with that for myself while still providing items for the rest of the family — not easy! That creamy shrimp pasta looks yummy — I guess I could just keep the pasta separate and combine at the table so that I could eat some, too ;)

I really haven’t been doing that great sticking to my menu the past few weeks. All I’ve been craving is Chinese take-out! Maybe this week will be better…

Hey Laura!

We tried out a lot of new recipes last week, and they all went great! We loved the Enchilada Casserole that your family also enjoys. I posted about it here: http://nathanandrachelatwood.blogspot.com/2010/05/enchilada-casserole-new-atwood-favorite.html

Let’s just say, there were NO leftovers! Hubby gobbled it up and I had no idea what the words “portion control” meant when I tasted it either. :) Thanks for sharing such a easy, great recipe.

Hi Laura,

We did have a few favorites from last week. A yummy recipe for Chili Cheese Grits from Ren at Edible Aria. Spicy but very flavorful. http://ediblearia.com/2010/04/29/brazos-de-dios-chili-cheese-grits/

And delicious Spinach Crepes Bernoise which we’ve made a few times and love. http://realfoodforlessmoney.blogspot.com/2010/01/spinach-crepes-bernoise-or-best-crepes.html

It has been very busy here and menu planning sure helps keep me on track.

I may have to work your cheese stuffed meatloaf in soon and the kids I think would love your french toast sandwiches. Another great menu plan, looks like.

I have to be honest, I’m daunted by thinking about planning a menu for an entire week for all 14-21 meals (My husband works from home, so every meal is a meal-not necessarily left overs in a brown bag). So the baby step I came up with is to take a week or two to write down what I do actually end up making for each meal and what ends up being eaten as leftovers. I’ll also start a list of our favorite meals and hopefully in the coming weeks I’ll be brave enough to plan a whole week ahead.

I just looked at the french toast sandwhiches, that looks amazing! I will be trying this one for sure! Hope you enjoy your time while your husband is home!

The newest recipe I’m loving is one for mango-pineapple salsa I found at Taste of Home (http://www.tasteofhome.com/Recipes/Pineapple-Mango-Salsa-2). It tastes great with fish, pork chops, chicken, etc. I even like it with chips, or just a spoon.

That hashbrown recipe looks great! I have to give a recommendation for these black bean and corn quesadillas I made for the first time last week. They were great! (And vegetarian = less money spent too!) http://allrecipes.com/Recipe/Black-Bean-and-Corn-Quesadillas/Detail.aspx

I’m new to your blog, so this might seem redundant to previous posts, but I love the idea of having a leftovers buffet! I cook all the time and I hate to see extra food go to waste. Thanks for the wonderful idea!

Reply

49 Laura May 10, 2010 at 9:07 pm

I hate wasting food too so that’s why I always schedule in a leftover day. We line all the leftovers up on the counter and everyone can pick and choose what they want. It works really well AND I get a night off from cooking, woohoo! :)
