Hi fellow menu planners, how are you?  Hope you had a wonderful week.  We are on the count down here to when my hubbie moves away for work (the kids and I will go later) and anxiety levels are rising.  Needless to say I’ve neglected my emails something awful so please forgive me if I haven’t responded to you.  I’ll really try hard to get to those this week.

I want to give a shout out to Kristin of A Funny Thing Happened on the Way for suggesting Pioneer Woman’s Chicken Spaghetti recipe for my church potluck.  It was delicious and pretty easy to prepare.  We do a church potluck every week so I’m always looking for easy potluck recipes.  I’ll be posting my selection here each week unless of course I’m stuck and then I won’t LOL.

And I have to tell you that the Rosemary Chicken Pizza we had last week is just one of my favorites.  It’s so nice to have a change from the standard pepperoni pizza in our house.  I just love sun-dried tomatoes, yum!!  Of course my kids aren’t crazy about them but that’s just the way it goes sometimes.  If you are looking for delicious recipes, I highly recommend Leigh Anne’s site!

Here’s what we’ll be eating this week:

Monday: Spaghetti with Savory Spaghetti Sauce

Tuesday: Grilled Sirloin Steak and potatoes

Wednesday: Chicken Caesar Pitas

Thursday: Leftover buffet

Friday: Black Bean Quesadillas

Saturday: Herbed Tuna Sandwiches

Simple Supper Sunday ~ church potluck ~  Soft Garlic Breadsticks

I LOVE quesadillas… seriously. They are so great as a meal, and you can revive leftovers with them – they are a gift to kitchens everywhere! :)

I haven’t tried PW’s Chicken Spaghetti yet. I just love potlucks, all the food is always so good. Thanks so much for hosting another great MPM!

My sister in law makes a similar chicken spaghetti and it is awesome! I might have to add that recipe to next week’s menu. I had forgotten all about it.

I really like the idea of Chicken Caesar Pitas – recipes like that will get my family to have salad-like dishes without feeling like they are eating a salad. I hope your bread sticks are a huge hit at the potluck!

Well, I tagged my Mr. Linky with frugal and “flexitarian” but I’m not sure if many people know what that means :o) I suppose it’s just a fancy way of saying “less meat,” LOL. Not vegetarian or anything, we just try to eat a little less meat.

Oh, and the herbed tuna sounds yummy!

Oh wow that Rosemary Chicken Pizza looks delicious. And hope your hubby’s trip goes well. My hubs is usually gone 4-5 days a week so I know it can be hard.

We are actually moving but hubbie is going out ahead of us. I probably won’t go until the kids finish school at the end of June :(

I’m so excited! i’ve been menu planning for years, but never have shared it with anyone. I found your site on another blog friend of mine! Now, I’ve posted my first menu for everyone…even have some recipes on there! I can’t wait to put some of your recipes on my spreadsheet!!!

That pizza recipe sounds great! Now, if I can only break all the boys here out of the bbq pizza habit. It’s good, but I’m ready for a change, and that Rosemary Chicken pizza sounds wonderful!

Oh my goodness sun dried tomatoes are amazing on pizza! My new favorite topping on pizza is kale chips, mmmm. It’s a really good crunchy texture that I think pizza needs.

I LOVE Pioneer Woman’s cookbook. I have had several successes so far using her recipes. Your menu looks great as always! The chicken caesar pitas look great, I wish the rest of my family like caesar anything!

Good luck with the move! I’m amazed you can even think about cooking! That’s awesome! I’ve got your spaghetti sauce, quesadillas, and the chicken spaghetti marked.

I’m really interested in the Pioneer Woman–I’m assuming she cooks from scratch? That’s one of my main goals!

Thanks for the shout-out on chicken spaghetti. I made it and we LOVED it. I’m goign to sprinkle some bacon on top next time, because bacon always makes thing yummier!

Found this site today! Love the ideas.
I linked my menu post and a visual of my gmail menu calendar. LOVE gmail calendars. I set an email reminder to put the beans on early tomorrow and I can link my recipes right in my calendar. A friend of mine is doing a 365 soup blog this year and it’s SO great to be able to link to recipes right in my menu plan. I linked to her blog on my post if anyone’s interested in yummy soups all year!

Mmmm, that chicken pizza sounds great! I wonder if I can incorporate it somehow into the low carb area? I might have to work on that! Thanks for all the great menu ideas; I need them badly. It seems that I make a lot of the same recipes every week.

Moving can be so stressful. We’ve moved more then 3 times in 2 years.
Ugh!
Your menu sounds delicious. The Chicken Pitas remind me of a Rachel Ray recipe that we haven’t had in awhile. I think I’ll try that this week.

Chicken is roasting as I finish writing my post. Smells great, I love roasted chicken. And then I get to make chicken stock, for use later in the week. Double yippee!

I love Leigh Anne’s blog too, and the Rosemary Chicken pizza sounds fabulous! I’ve made a similar pizza before with sundried tomatoes and alfredo sauce…delicious!

All of these Menu Plan Monday ladies are on the ball! I posted at mid-day Monday and I’m already #385. Way to make me feel behind already, LOL! You ladies are Menu Planning Machines!!

The bean burritos look like a meal my family would enjoy. The PW spaghetti pie … well, I don’t want to even know how many calories are in each decadent bite! I actually gave Emeril’s spaghetti pie a healthy makeover a while back and it turned out great (added a shredded zucchini for good measure).

I clicked on one of these almost 500 weekly menu plans and found a guideline about “focused 15″– taking 15 dedicated minutes each day to tackle long-term projects. Of course, I can’t find it again when I want to read more! Does this sound familiar to anyone? Whose site was it? Thanks for your help.
