Next, I want to give you all a big shout out of thanks for last week.  I didn’t have to change one single link last week!  I was so proud.  So just in case we have some new people join us this week (welcome!) here is one last friendly reminder:

Previous week menu highlight goes to the Mexican Pasta Bake.  This turned out way better than expected.  I served it up for my in-laws with some garlic bread and a spinach salad and everyone really enjoyed it.   I love serving casseroles when company is over because there is no last minute rush on dinner preparation that has to be done.  It can all be prepared in advance and then you just pop it into the oven when ready and go right back to visiting.  My kind of meal!

So I’ve got one last exciting thing to talk to you about today.

Are you interested in hosting a Menu Plan Monday?

Next Monday I’m going to be out of town to take my son for allergy testing so rather than be stressed trying to do MPM from afar I thought I’d offer up the opportunity for one of you to host MPM.   I do have a couple of criteria though, you must be able to put your MPM post up Sunday evening by 8:00 pm PST (11:00 EST) and you must have Mr. Linky set up already on your site.  If you are interested and can accommodate both of those criteria, please leave a comment below letting me know you would like to be considered.    I’ll announce my decision on Thursday of this week.   Please feel free to bribe me in any way.  What?  Gosh did I just write that out loud? I apologize, such bad hosting behavior.  I totally wouldn’t accept any bribes…have I told you how much I LOVE chocolate?….stop it Laura…so bad.

Here’s what we’ll be eating this week:

Monday: Linguine with Garlic Sauce (I’ll use 1% milk and light cream cheese to lighten it up)

Tuesday: Chicken Tortilla Soup served with homemade bread machine bread

Wednesday: Honey BBQ Meat Loaf served with roasted red potatoes

Thursday: Leftover Buffet

Friday: Turkey Meatball Subs

Saturday: 30 Minute Almond Chicken

I would love to help you out, I have Mr. Linky set up ready to go. As for bribery… hmmm do you take gift cards, lol!
The linguine looks awesome, have you considered using low fat sour cream to lighten the sauce? That is what I use, it tastes great and you can’t tell the difference.

I’d LOVE to host MPM again…it was SO much fun last time…but maybe since I already got to do it once you might want to spread the love…but just in case you want me to do it again…I’d so do it…and I’d also give you a free copy of my What to Do with the Cocoa in Your Kitchen ebook…since that is the best I can do from miles and miles away to supply you with chocolate.

AND, if you do choose me…I promise not to use run-on sentences in my hostess post such as the one I just wrote above.

I think I’m on the last day of this stinkin cold so that means I can get things back to normal in the kitchen. I’m ready to bake and cook!

I love seeing recipes with WW points – maybe I’ll get back on the WW bandwagon, I really need to!!

I’d love to host MPM for you, but I’m not sure I can compete with these other girls. I can’t bring you chocolate, which is a food group at our house, because although I live just across the border from Canada, it’s completely on the other side of the country about three time zones away.

Yay, menu planning is done!
That Mexican Bake looks yummy – I think I’ll put it on the menu next week (with a few changes to make it suitable for those with gluten & dairy intolerances).

Someday I would love to host MPM. I love browsing everyone’s menus! But I don’t have Mr. Linky, and right now it’s about all I can do to get my own menu posted without the kids trying to work on the computer with me!!

I’m very glad to have found this site. I also offer my menus on Monday and didn’t realize that you have a thriving exchange! My menu offers all veggie recipes and the food for my family (for all meals) cost less than $60 this week – hooray!

Just came back to see if there was a St. Patricks themed banner (or Irishish) I guess I’ll have to use the “green” one instead lol. Oh well…
