Hey all, how are you?

There were some problems last week with Mr. Linky disappearing and then reappearing only to disappear again.  Hopefully all those kinks have been worked out now.  If you don’t see the links it just means their site is down but hopefully not for long.

Last week I got a few questions about my Leftover Buffet and Simple Supper Sunday nights so I thought I’d explain a little bit about what those mean for us.

Leftover Buffet night (usually Thursday night for us) simply means I go through the fridge, arrange all the leftovers on the counter and then everyone helps themselves to a little of this or a little of that.  Everyone heats up their own plates and digs in.  I get a little crazy if the leftovers pile up too much in the fridge so having a mid-week leftover day scheduled keeps me from doing the funky chicken dance.

Sundays we like to keep pretty easy around here and because we usually eat a late lunch no one wants a big dinner.  So for us it usually means grilled cheese and soup or my husband’s yummy omelets.  He really does make the best omelets which is amazing considering he’s allergic to eggs and has never ever tried one (isn’t that sweet!).   Having a simple supper on Sunday also means we don’t start the next week off with leftovers in the fridge.  I do like starting the week with a clean slate so that when I get groceries on Monday morning there is room for them in my fridge.

Okay last week was a great tasting week for us and I enjoyed it all.  Not a dud in the batch which always makes me happy :)  We haven’t made the Lemon and Garlic Roast Chicken yet though because we ended up being invited out for dinner on Saturday and since I hadn’t taken the chicken out of the freezer yet it was easy to move that meal to this week.  I love the flexibility of menu planning!

We have something similar to the Leftover Buffet, but we end up doing it on Sundays, as we usually don’t feel like cooking, and since we are doing groceries that day, it helps clear out the fridge.

We do simple meals on Sunday, too. I like to think of Sunday as a “day of rest” in all areas, including cooking. sandwiches or simple soup are our favorites.

I’ll have to try the leftover buffet – we try to take them for lunches but we always end up with more than we can deal with.

Hey Laura– I wanted to say that I also love the flexibility of menu planning and have my share of plans changing and meals get moved around quite a bit. But that just makes my planning easier for the next week! We seem to eat similar meals– I also am serving some sort of soup once a week in these cold winter months. After all, soup is good food.

I love the idea of a leftover night! What a great way to empty out your fridge. I think I’ll start that, too!

I’m talking lunches at my blog today because I really need some more inexpensive ideas. The old stuff gets boring after a while. I’ve posted some recipes that the kids love, but I’m looking for more, if you have any!

Getting back into the swing of things. :)The holiday season and then vacation has put me off track with menu posting. It’s good to be back on schedule. Regarding Leftover Buffet…we have leftovers scheduled for every Saturday as we never know ahead of time what the day will hold. Makes planning easy, keeps me free to do whatever, and cleans out the fridge, which is always a good thing. :) ~~Rhonda

Menu Plan is posted for the week. We’ll see if we can stay on track this week. Last week we spent a lot of time at the car dealership buying 2 trucks so needless to say our menu plan was out the window LOL

We also have a planned Leftover night. It helps us to not waste food and use what we have. And that helps the budget, too!

I love having a simple Sunday dinner! I almost always have some beans going in the crockpot..whether its chili, or beans and a turkey drumstick…nothing better than having dinner made when I get home from church!

Until a month or so ago, I went grocery shopping on Mondays also, I liked being able to start a week with new food and a new meal plan. However, I got tired of spending my Sunday planning my grocery list and meal plan. Now I make Monday my planning day and go grocery shopping on Tuesday mornings.
