Many of you participating in Menu Plan Monday also deal with food allergies so I thought I’d share this ice cream recipe that I’ve been making for my son for years. He loves it although keep in mind he’s never tasted regular ice cream :) My ice cream maker is a simple one (Cuisinart) and it does the job just fine.
As a parent of a food allergic child I know how rewarding it is to be able to offer something similar to what the other kids are eating. If sharing this recipe helps even just one person, I’m a happy girl. Enjoy!
Vanilla Dairy-Free Ice Cream
2 cups dairy alternative, divided (I use Rice Milk)
2 cups safe marshmallows (I use Jet Puff)
1/3 cup sugar
3 tbsp oil (I use Canola)
1 tsp safe vanilla extract
1 package gelatin (I use Knox)
In a medium saucepan combine marshmallows, sugar and one cup of dairy alternative. Stirring constantly bring marshmallow mixture to a slow boil until sugar and marshmallows have dissolved. Remove from heat and allow to cool. Meanwhile combine gelatin, one cup of dairy alternative and oil, allow to stand for five minutes. Using a stand or hand mixer (I use a whisk) beat gelatin, oil and dairy alternative mixture until foamy. Add vanilla. Combine all ingredients together and transfer to the frozen canister of an ice cream maker. Process according to manufacturer’s instructions (mine takes approx. 20 minutes).

I am passing this on to a mom who will be thrilled to get it:)
Just wanted to say thank you for this recipe! My DD is lactose intolerant and we’ve quit eating ice cream because she can’t have any. Now she can have her own!!
You have totally made my day. Thanks!
I have the Cuisinart ice cream maker too, Laura. This recipe looks easy and sounds good too. Your photo made me remember I need to get my Cuisinart out and put it on the counter where I’ll remember I need to make ice cream.
By the way, I love your new big girl desk. You got a great deal on those two pieces!
That looks interesting! Andrea M, Breyers makes a lactose free vanilla that is good, and I’m severely intolerant and can eat it. But I am so trying this… Thanks, Laura!
I have a Quisinart too! Love it!
I’m sure lots of people will be very thankful you posted this.
Thank you sooo much for posting this! I have a lactose problem myself and we’re getting ready to go on vacation next week where we make lots of homemade ice cream that I can only have a spoonful or two of…this will be an excellent treat for me! THANK YOU!!!
Thank you, thank you, thank you! I am going to have to try this recipe be out. I don’t have an ice cream maker, but I am hoping the coffee can inside of a coffee can method will work!!!
Thank you so much. My daughter is allergic to Milk, Eggs, and Peanuts and I am really tired of paying 5 dollars for a pint of ice cream
This was forwarded to me from a friend, I have everything in the pantry and my allergic kids have sore throats (in summer!) and are sick of popsicles, so I’ll give this a go today!
I’m a lurker, but had to send you a big thank you! I miss making ice cream with my kids, and they will be more than thrilled with this alternative!
Thank You! Thank You! Thank You!
Great recipe! I tried it yesterday and it worked really well. I used the microwave to melt the marshmallows and used avocado oil (trying to get my skinnie minnie to chub up!). Thanks again!
Thanks so much for sharing this. We have just become aware of a milk allergy in our family. This recipe sounds like a special treat that will be very much enjoyed.
Thanks!!!
Thank you so much! My youngest daughter has a milk allergy and I cannot wait to try this!
You have just made my day:) I don’t have an ice cream maker. But this recipe is enough to make me want to go buy one tomorrow. I have a son who is both SOY and DAIRY allergic. I can’t wait to try this for him. Thank you.
Thank you for your recipe. My son has a Dairy Allergy. I have made ice cream using frozen juice concentrate and rice milk, but this sounds even better. Do you have any other Dairy free recipes to share?
Sounds Good, we’ll try it. For all those lactose intollerant Dryers now makes a lactose fee icecream. It is a whopping $5-$6 for 1 1/2 quarts but for special occasions my daughter loves it as a treat.
That would be lactose FREE not fee.
