Menu Plan Monday – April 9th

I hope everyone had a nice Easter! Another week is upon us and we will be eating plenty of ham leftovers this week. One sad part about my Easter/daughter’s birthday dinner though was I couldn’t make the Chocolate Dipped Strawberry Cheesecake recipe due to the fact that there were no strawberries to be found in this small town that I live! Oh the joys of living in a small community. When I do end up making it though I’ll be sure to let you know how it turns out.

I’m keeping my menu simple this week:

Monday: Italian Pork Chops
Tuesday: Cheesy Ham and Rice Bake (using leftover ham)
Wednesday: Pizza Pancakes (with ham instead of pepperoni)
Thursday: Leftovers
Friday: Club quesadillas served with tomato soup

I will definitely be checking out your ham recipes since we have LOADS of leftovers, too.

I am glad you had a great Easter, even if it was strawberry less. I could have sent you some :)!!

By the way, I got my daughter’s Easter dress finished … at least with lots of help from my friend. I will post pictures a little later.

This week looks great! My husband said the Pizza Pancake recipe sounded good so we’ll be trying them next week!

I think the cheesy ham and rice sounds much better than than my ham and bean soup I am planning. May have to make a switch on that one! Happy MPM!

My menus are up. I don’t have a ton of ham leftovers, as I shared them with my daughter’s family. I think we have enough ham leftovers for one meal. And that’s fine!

No ham leftovers for us. But we DO have leftovers from the Thai restaurant where we had Easter Dinner!

The pizza pancakes look interesting, I wonder if they could be made with the turkey sausage we use? I know our pepperoni would obviously work in it.

ACK!! I almost forgot about it!! I had the draft ready Saturday and wanted to check on a recipe, then Sunday was busy with Easter, and oops! It wasn’t on my to do list today!

I must remember to put MPM on my Sunday to do list.

Anyway, it’s up now.

so sad about the strawberries – but at least that cheesecake is something to look forward to later!

i’m behind schedule this week with my kids’ “Spring Break” but i’ve finally got my menu plan posted – and we’re taking advantage of leftovers too!
