Hi friends! I hope you are all enjoying the holiday season. My two big kids are home from college this week and I’m so very excited about it! I miss them both so much and am counting down the sleeps till they are here.
Last spring during an end of season sale we bought ourselves some cross country skis in hopes of helping me embrace winter a wee bit more. We got out today for the first time and it was so much fun. I really enjoyed myself even if it was super tiring. I can’t wait to go again.
But then of course I needed a nap after all that hard work. I had a little company on the couch keeping me warm. My sweet sweet Bella girl.
Recipe Highlight:
At this time of the year you may have a few potlucks to attend. I just made this Slow Cooker Mac & Cheese recipe again today for my son who was going to a youth potluck. He absolutely loves it and since it’s a slow cooker recipe it’s fantastic for potlucks. I know I’ve shared it before but thought it would be worth mentioning again if it helps someone out. It’s quick & easy to throw together, especially if you get your kids to grate the cheese :). You can also easily double it if you need to.
Here’s what we’ll be eating for dinner this week.
My Weekly Menu Plan:
Monday: Paleo Shepherd’s Pie (missed from last week)
Tuesday: White Chicken Chili
Wednesday: Paleo Butternut Squash Soup
Thursday: Ladies potluck lunch: making Homemade Blender Salsa and Guacamole and Allergy Free Gingersnap Cookies. Kids are home! I’m making for supper: Slow-Cooker Savory Pot Roast with Gravy
Friday: Pizza Party Friday Night with 5 minute homemade pizza dough and for me Classic Cobb Salad
Saturday: Sausage & Potato Sheet Pan Dinner
Sunday: YOYO (you’re on your own!)
