Hey y’all! Happy making a menu plan day. We are so excited to celebrate my son’s 17th birthday this week. He is such a great kid and I love hanging out with him any time I can get. I think about when the kids were little and how excited I would get for their first anything and now I’m on the other side savoring all the lasts. With him graduating in June, this may be his last birthday at home…sniff. You all know how much I love celebrating birthdays so I want to make this one great for him.
Paleo Donut Holes:
Yesterday I was wanting a pumpkin treat so I decided to make these Paleo Cinnamon Sugar Pumpkin Donut Holes. They were easy to make and delicious but lets be honest, they were really just muffins. It took some time to scoop the batter into the mini muffin tin so next time I don’t think I would bother and just make regular sized muffins instead. And I would ditch the wrappers too.

My Weekly Menu Plan:
Monday: Sun-Dried Tomato Bacon Mini Frittatas
Tuesday: Crispy Baked Salt and Pepper Wings served with green smoothies
Wednesday: Hawaiian Tacos (these are amazing, I eat mine without the shell)
Thursday: Leftover buffet
Friday: Pizza Party Friday Night! and for me Honey Garlic Salmon
Saturday: Our middle son’s 17th birthday! At his request we will be having: Paleo Oven Baked Ribs served with baked potatoes and corn on the cob. And for dessert we’ll have his favorite Gluten, Dairy & Egg-Free Chocolate Cake and Frosting
Sunday: YOYO (you’re on your own!)
