Hi friends, thank you so much for all your support and encouragement on last week’s post when I shared my recent diagnoses with you regarding my autoimmune disease. I was so scared to share it for some reason but you all made my day and gave me a real boost of confidence in knowing that I can do this new way of eating. You are awesome! I’ve spent this past week researching, food shopping and organizing my kitchen and fridge in preparation. It’s going to be hard but I’m ready to tackle this autoimmune protocol diet! If anyone is curious about what I can eat on this plan here is a great printable list, I’d much rather focus on what I can eat rather than what I can’t. Remember that the recipes you see below are what the rest of my family will be eating unless otherwise noted.

My Weekly Menu Plan:
Monday: Turkey, Bacon and Avocado Panini Sandwiches
Tuesday: Bacon Cheeseburger Casserole (family favorite)
Wednesday: Dilled Pot Roast (Paleo AIP friendly without the sauce) served with sweet potatoes
Thursday: Leftover buffet
Friday: Easy Lemon Garlic Grilled Chicken Breasts (Paleo AIP friendly) served with salad
Saturday: My youngest son turns 9! He is requesting two slices of Vanilla French Toast served with bacon for breakfast, lunch out at Boston Pizza and for dinner, Homemade Pepperoni Pizza (using dough out of the bread machine). For dessert, he wants Chocolate Mint Layer Cake with chocolate icing with chocolate chips and sprinkles on top 🙂
Sunday: YOYO (you’re on your own)

I’m so sorry to hear about your arthritis. I just returned from a whole grains conference where experts were talking about the rise in autoimmune diseases. Janice and I discussed the research on our radio podcast this week (Hygiene theory + issues with micro-biome were discussed). I have good friends who follow the Paleo diet. They eat a lot of eggs and nuts (but not peanuts), so I’m not sure why you have been told to avoid those foods. I’m just curious based on what my Paleo friends have been eating and what I’ve been reading! Please let me know if you need any help with your new diet plan. Thanks Liz! I’m actually following the Autoimmune Protocol Diet which is just a little more restrictive than the Paleo diet. Due to my inflammation, I can’t eat eggs, nuts or any nightshade vegetables during the elimination phase but the goal is to eventually reintroduce them after my gut has had a chance to heal and move into the regular Paleo phase.

I love that you are trying to incorporate your meals with your family as best as you can. You already know that I have been on this journey since the beginning of the year and again I want to encourage you and let you know I am here as a support if you ever need. (hugs) P.S.
