I have another cooking disaster to share with you today. Yesterday I decided to make a crock pot quiche recipe for our church brunch potluck. As I’m never too efficient in the mornings (so not a morning person!) I decided to prepare it the night before and just leave it in the crock pot in the fridge ready to pull out and plug in in the morning. The instructions didn’t suggest this, I just thought it would be a good idea. It wasn’t. After cooking on low for the 4 hours as recommended it was still runny and lunch was being dished up. Oops. I did quickly turn it up to high and it was ready within another hour but by then of course everyone was finished eating. Oh well, these things happen. It was yummy though when we did get around to eating it. I definitely think it had to do with me making it the night before and not stirring it before turning it on. I will definitely have to remember that for next time.
Gluten Free Pizza:
Tonight we ordered pizza from Domino’s and I have to tell you that their gluten free pizza is delicious! It was probably the best I’ve had from the various restaurants I’ve been to. It was thin and crispy which I like even in a normal crust and I don’t think you’d be able to tell it was even gluten free. Well done Domino’s!

My favorite recipe from last week goes to the Bacon Cheeseburger Casserole. Love this one! Easy to throw together and very yummy!

Yum on the Italian Sausage Zucchini Bake sounds delish! I didn’t even know that Dominos had a Gluten Free Crust. We do not have one near us but kuddos for them! I’ll have to tell my SIL who is GF.

Your Italian sausage zucchini skillet recipe looks delicious — I’d really like the cottage cheese addition to it. I’d love to smell that cooking!
I think it’s a great idea to have a short list of easy recipes from the freezer or pantry–I could hardly survive without that. We used to depend more on take out food in pre-celiac days, but finding gluten-free take out is difficult at best, and often not very nutritious. Harder than that, we now live in the “sticks” where the nearest restaurant is 30-45 minutes away. I can make tuna salad wraps or a bacon & cheese omelet, eat dinner and clean up before we could even drive to a restaurant.

Oh that’s funny…I’ll probably have mine over pasta as I really dislike rice but my family has requested the rice as I rarely make it 🙂

Was reading about your crock pot mishap. Did you let it come to room temp before cooking? It has been my experience that with the dishes that are prepared ahead of time and placed in the fridge over night, you either have to let it come to room temp first or add cooking time. Most recipes are based on the assumption that you are making it at the time and cooking it then so everything would be at room temp already.
I had a terrible mishap this week. My crock pot lid suddenly blew up in my dishwasher. Millions of pieces of glass all over the floor. My daughter was unloading the clean dishes, which had cooled off completely before we even opened the door. She was thankfully standing across the room, as was I when it just suddenly popped, little wisp of smoke went up, then glass breaking. SO GLAD that she was not next to it at the time, could have been bad.
I hope to be linking up again next week, I have taken a few weeks off from planning and from the computer. These were planned. Have cleaned out the pantry, need to clean the freezer again, and will then know what I have to work with as far as menu planning. Will be working off what is on hand as much as possible to start reducing what is in the cabinets for the big kitchen redo.
