Hi friends, here we are at the end of July. Do some of you have school starting next week already? Since our kids don’t go back to school until September our summer holidays are just getting good with the arrival of my parents this week. They are here for almost three weeks and for one of those weeks, hubby and I are escaping for a little holiday of our own without kids. Whoot, thanks Mom & Dad! My parents are also bringing my sweet 5 year old niece with them and I just cannot wait to see and spoil her. It’s so hard when you live so far away from family and I’m so thankful that my sister is going to share her with me. So so excited!!

Menu Planning Resource:
Every week you’ll notice that I add a graphic at the end of each MPM post about one of my favorite menu planning resources called Plan to Eat. This site helps you plan your menus each week by allowing you to EASILY add and organize recipes along with creating your shopping lists for you. It really is so easy to use. A friend of mine did a great video recently explaining how it all works so I wanted to share it with you so you could see for yourself. Gluten-Free Resource:
As many of you know I went gluten-free back in March, a decision I do not regret at all. I actually went off the diet for two days in June to celebrate my birthday and the negative results were so obvious that it was all the reassurance I needed to not want to do that again any time soon. Anyway this post below is an excellent resource for those of you who many be just starting out and feeling a little overwhelmed with it.

My Weekly Menu Plan:
Monday: Pepperoni Pizza Potato Skins served with corn on the cob
Tuesday: Grilled Ham Panini served with apple slices
Wednesday: Leftover buffet
Thursday: My parents are here! Spaghetti and meat sauce served with salad and garlic bread
Friday: Crock Pot Rotisserie-Style Chicken (although I will be making it in the oven this time) served with mashed potatoes and broccoli
Saturday: Black Bean, Corn & Cheese Quesadillas (with homemade corn tortillas)
Sunday: Slow Cooker Pulled Pork Sliders served with spinach salad

So glad you are doing well going gluten free. We are also (my daughter was diagnosed first with celiac) and I didn’t realize I could feel so good or have as much energy until I started eating gluten free like my body wanted. 🙂 Here’s to more summer vacations (we have another month, also).
