Happy Thanksgiving week to my American friends! I hope your menus are coming together nicely and your dinners turn out amazing! In case you are still looking for a delicious dessert to serve I came across these two fall desserts that not only look yummy but easy to make as well.
The first is a Pumpkin Cheesecake Pie from my favorite site, Taste of Home:
The next is a Creamy Pumpkin Trifle from Dashing Dish. I always think trifles look so pretty on a table and get so many ohhhhs and ahhhhs.
So there you go, two easy dessert alternatives for you. Of course if you don’t like pumpkin then I am going to feel really bad that I didn’t share something without pumpkin. So just in case, may I suggest some Apple Pie in a Goblet? Seriously how cute and fun is this:
And if you don’t like pumpkin or apples? Well then I give up you’re on your own 🙂
Yesterday I pinned the cutest menu planning/grocery list printable. And guess what? It’s FREE, whoot! Go check it out.
So I had a cooking disaster this past week with the waffle recipe that was on my menu. Gosh they didn’t turn out at all and were in fact a soggy mess. I ended up throwing them all out and my hubby made pancakes instead (because I was pretty grumpy by this time). Blech. Anyone else experience any cooking disasters? Please tell me I’m not the only one.

Tuesday: My youngest turns 6 today! His choice – homemade cheese pizza with Oreo Cupcakes for dessert
Wednesday: Beef and Black Bean Taco Bake
Thursday: Sunday Pot Roast (on Thursday, I’m such a rebel!) ~ I’ll be using my slow cooker
Friday: Dinner out!
Saturday: On our way to Ontario, yay!! Of course we’ll be leaving lots of leftovers for hubby 🙂
Sunday: Can’t wait to find out!

Last weekend we forgot to put the oil in the waffles, and that was definitely a disaster as they would NOT come out of the wafflemaker. It’s not much oil, who would have thought how bad that could be? Eek, what a mess! We won’t be forgetting again soon 🙂

Hi, Laura. Thanks for the early link up time this week :). I always look forward to seeing what’s on everyone’s menu. Actually, mine is very “Thanksgivingish”…I don’t have to host the big meal, I get to go to my in laws and then to my aunt’s later in the day :). Just have to contribute something to the buffet, but not make the whole meal :).

I’m so sorry about the waffle recipe! We have modified that original recipe and make our version quite a bit, and they are a favorite in our house. You can find them in our menu plan from last week – as well as under “Waffles {of Insane Greatness}” on our recipe index page for Breakfast.
However, when I went to make them last week, our waffle maker would not heat up 🙁 So, now i’m in the market for a new one? Any recommendations? I’m hoping to find one with “low” “medium” and “high” settings, or some sort of temperature control. We ended up using the batter for pancakes, but they were no where near as good as the waffles.

Waffle makers that don’t work are a crisis in our house 🙂
We recently replaced our 20-year old Black and Decker wafflemaker — we were so sad to see it go! We like “just plain” square waffles, so after looking at all the alternatives, we chose to buy another Black and Decker. Not exactly in love with it, as I can already tell it will not last as long as the last one, but it does have low/med/high settings, and a “waffle” range, as well as an “off”, which the old one didn’t have ( you had to unplug it!). It also has the plates you can flip over, though we rarely use the flat sides. Good luck with your wafflemaker replacement!

Had a recipe fail last night but it was probably my fault (usually is). I was making balsamic glazed green beans and I doubled the recipe, but didn’t double the pan. And I didn’t have a bigger pan to switch it to so my vinegar took FOREVER to cook down and the green beans absorbed so much of it during the process that they tasted just awful.

I was wondering how come there were already so many menus up when I got here, to funny.
I had a cooking fail last week to. I was making my fluffy dinner rolls ahead of time to freeze for Thanksgiving dinner, and I doubled the batch. My machine couldn’t seem to handle that much dough and they barely rose when I baked them. Not pretty.

Don’t feel too bad, Laura, I had a waffle disaster (just on Saturday morn) too: I had made our favorite waffles (it uses yeast and they are amazingly good), and left them to sit on the counter. I had used too small of a bowl and the dough was all over the counter by the time I came back. I put the bowl into the sink because there was dough all over the bowl and set to work cleaning up the counter while the waffle maker heated up.
My husband comes into the kitchen to make coffee and thinks the bowl is ready to be washed out (full of dough?) and RUNS WATER IN IT. Ack. I didn’t know how much before I stopped him, so I went ahead and made them anyway. Disaster!! Soft, soggy waffles that wouldn’t crisp up no matter how long I cooked them. When I gave up on the waffles and thought I’d just make pancakes with the rest of the dough (I don’t give up easily!), they were rubbery and soft. Very weird, kinda like thick crepes. Just from extra water- sheesh.
Oh well, now we get a good laugh at how bad they were. And my husband is not allowed in the kitchen while I’m cooking. 🙂

I can sympathize! Yesterday I had TWO recipes fail! The first was a new self-icing cupcake recipe. Maybe I didn’t swirl in the icing properly, but they didn’t rise at _all_. In fact, some are concave. On top of that, I made a tried and tested roasted butternut squash soup that ended up tasting like all the ingredients were raw, even though everything was cooked thoroughly. I just left the pot on the stove, since I was too discouraged to decide what to do with it.

I feel the cooking disasters… I have them all the time sense I’m a “creative” cook… aka my husband prizes me on being able to throw 20 ingredients into the pot and have it taste great…. most of the time lol… my blunders tend to happen the most, during baking! ( note… did a practice apple pie last night… and a quiche last week.. with homemade crusts… and well lets just say I now realize.. that I need to move my oven rack up a tad…. tastes good but if i didn’t add the bit of extra sugar, it would have burned instead of carmalized!)

If I had a dollar for every time I had a cooking disaster (and every time I was late for something, such as this week’s Menu Plan Monday), I’d be living on an island, somewhere in the tropics, sipping daiquiris, Mai Tais, and pina coladas, and having someone else do all the cooking for me!

Homemade cranberry sauce
Green beans (boys’ request)
Corn (boys’ request)
Cherry pie? (not sure on dessert yet)
Cupcakes (boys’ requested)
