In a microwave safe bowl, add chocolate chips and whipping cream. Microwave for one minute. Stir together until completely combined.
To assemble sandwiches. Place a scoop of ice cream between two waffle quarters. Dip corner in chocolate ganache and place on plate. Top with additional chopped peanut butter cups, if desired.
Continue until all sandwiches are created and place in freezer until set.
