Granny's Soft Ginger Cookies

A delicious soft ginger molasses cookie
Ingredients
  • ½ cup butter
  • ½ cup lard (or butter)
  • 1 cup brown sugar
  • ½ teaspoon salt (use 1 teaspoon if using unsalted butter)
  • 1 egg
  • ½ cup molasses
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger (2 if you like a stronger ginger taste)
  • 1 teaspoon vanilla
  • 2 teaspoons baking soda
  • 3 tablespoons boiling water
  • 3 cups flour
Instructions
  1. In a bowl or stand mixer combine butter, lard and brown sugar. Blend well.
  2. Add the egg, molasses and vanilla and then blend again until well mixed.
  3. Dissolve the baking soda with boiling water and stir into wet mixture.
  4. In another small bowl combine the flour, salt, cinnamon and ginger. Add it slowly to the wet mixture while beating until smooth.
  5. Roll into balls and put on a cookie sheet. Flatten with the back of a spoon.
  6. Bake at 350 degrees for 10 minutes.
  7. Cookies will be soft when they come out of the oven but will firm up while cooling.
