Hi friends! I hope you are all staying well. It’s another week and time for another menu plan. You know you’ll be glad you did it so don’t put it off . Trust me, go do it now! You won’t regret it!
Recipe Highlight:
Okay this is a good one y’all. This past weekend I needed to use up a bunch of basil my little basil plant had produced. So I got onto Pinterest (where I find most of my recipes!) and did a quick search for a Paleo pesto. There were quite a few recipes to choose from but most of them called for pine nuts. I was pretty sure I had never seen these in our small town grocery store so I opted to go for one made with cashews instead. And my goodness was this Dairy-Free Paleo Pesto recipe ever good! Garlicky and dairy-free and so absolutely delicious!

I had it over some Paleo pasta and I was so happy! Have you ever made your own pesto?
Here’s what we’ll be eating for dinner this week.
My Weekly Menu Plan:
Monday: Best Grilled Chicken Thighs served with tossed salad
Tuesday: Easy Bunless Burgers served with Garlic Roasted Potatoes
Wednesday: Southern Pulled Pork Bowls
Thursday: Leftover buffet
Friday: Pizza Party Friday Night with bread machine pizza dough and for me Paleo Pizza
Saturday: Tomato Basil Bisque with Italian Meatballs
Sunday: YOYO (you’re on your own!)
